  • 1 kg Spätzle, frisch, aus dem Kühlregal
  • 400 ml Sahne
  • 200 g Emmentaler, gerieben
  • ½ Bund Petersilie, gehackt
  • 1 Zwiebel, in Würfeln
  • Salz
  • Pfeffer
  • Butter

Instructions

  1. Preheat your oven to 200°C (top and bottom heat). Prepare a large ovenproof baking dish by greasing it thoroughly with butter to prevent sticking.
  2. Peel and finely dice the onion. In a large skillet or saucepan, melt a generous knob of butter over medium heat. Add the diced onion and sauté it, stirring often, until it becomes soft and translucent, but not browned—this should take about 3 to 5 minutes.
  3. Pour the cream (Sahne) into the pan with the onions. Stir in the chopped parsley, reserving a little for garnish if desired. Season the mixture generously with salt and freshly ground black pepper to taste. Bring the sauce to a gentle simmer and let it cook for 2-3 minutes to allow the flavors to meld.
  4. Add half of the grated Emmentaler cheese to the cream-onion mixture. Stir well until the cheese is completely melted and the sauce is smooth and creamy.
  5. Add the fresh Spätzle directly into the pan with the sauce. Gently fold the noodles into the cheese sauce until all the Spätzle are evenly coated and the mixture is well combined.
  6. Transfer the cheesy Spätzle mixture into the prepared baking dish. Use a spatula to spread it out evenly.
  7. Sprinkle the remaining grated Emmentaler cheese evenly over the top of the Spätzle mixture to form a delicious cheesy crust.
  8. Place the baking dish on the middle rack of the preheated oven. Bake for about 20 minutes, or until the cheese on top is melted, bubbling, and golden brown. If you prefer a darker crust, you can broil it briefly at the end.
  9. Remove the dish from the oven and let it rest for a few minutes. Sprinkle with the reserved chopped parsley for a fresh touch before serving. Serve the Käsespätzle hot, straight from the baking dish.

Notes

For an extra flavor boost, you can top the baked Käsespätzle with crispy fried onions before serving. If you like, you can use a blend of Swiss cheeses for more depth of flavor. Leftovers can be reheated in the oven or microwave. Serve with a crisp green salad to balance the richness.
