Ingredients
- 1 bunch spring onions
- 1 red bell pepper
- 250 g ground meat (beef or mixed)
- 500 ml broth
- 125 g short spaghetti (Gabelspaghetti, or substitute with small pasta shapes)

- Pepper, to taste
- Curry powder, to taste
Instructions
- Prepare all your ingredients before starting: Wash the spring onions thoroughly and cut them into rings about half a centimeter thick. Wash the red bell pepper, remove the seeds and white membranes, and cut it into small cubes. Set the vegetables aside.
- Heat a large, deep skillet or frying pan over medium-high heat. Add the ground meat to the pan and cook it, breaking it up with a spatula or wooden spoon as it browns. Season the meat with salt and pepper to taste. Continue to cook until the meat is fully browned and no longer pink, which should take about 4-5 minutes.
- Add the sliced spring onions and diced red bell pepper to the browned ground meat in the pan. Stir everything well to combine, and sauté the vegetables with the meat for about 2-3 minutes, until the onions start to become soft and the bell pepper slightly tender.
- Pour the broth into the pan, stirring to deglaze and lift any browned bits from the bottom. Add the short spaghetti (Gabelspaghetti or other small pasta) to the pan, making sure the noodles are covered by the broth. Stir well to combine all the ingredients.
- Bring the mixture to a gentle boil, then reduce the heat to medium-low. Simmer the pasta while stirring occasionally to prevent sticking. Cook until the pasta is tender and has absorbed most of the liquid, which should take about 8-10 minutes. If necessary, add a little more broth or water if the mixture becomes too dry before the pasta is cooked.
- If you prefer a thicker sauce, sprinkle in some sauce thickener (such as instant roux or cornstarch mixed with a little cold water) and stir well to incorporate. Allow the mixture to simmer for another 1-2 minutes until it thickens to your desired consistency.
- Taste the noodle skillet and adjust the seasoning with additional salt, pepper, and curry powder as desired. Stir everything thoroughly to distribute the spices. Serve the dish hot, garnished with extra spring onion rings if you like.
Notes
You can use any type of ground meat for this recipe, such as beef, pork, or a mixture. For a vegetarian version, substitute the ground meat with plant-based mince or extra vegetables like mushrooms. If you don’t have Gabelspaghetti, any short pasta shape will work. Adjust the amount of curry powder to your taste preference for a milder or stronger flavor.
