Instructions
- Preheat your oven to 180°C (356°F) with both top and bottom heat (Ober-/Unterhitze). Prepare a baking tray by lining it with baking paper or greasing it thoroughly with butter to prevent the cake from sticking.
- Place the butter and sugar in a large mixing bowl. Using an electric mixer or a whisk, beat the mixture until it becomes light, pale, and creamy in texture. This will help incorporate air and create a fluffy cake base.
- In a separate bowl, crack the eggs and whisk them until well combined. Gradually add the beaten eggs to the butter-sugar mixture, mixing thoroughly after each addition to ensure a smooth and uniform batter.
- Slowly pour in the milk while continuing to mix, ensuring it is fully incorporated and the batter remains smooth.
- In another bowl, combine the flour, cocoa powder, baking powder, and vanilla sugar. Sift these dry ingredients together to remove any lumps and to distribute the leavening agents evenly.
- Add the dry mixture to the wet ingredients in several portions, gently folding them in with a spatula or mixing on low speed. Mix until you have a smooth, lump-free batter, being careful not to overmix.
- Pour or spread the batter evenly onto the prepared baking tray, smoothing the surface with a spatula to ensure even baking.
- Place the tray in the preheated oven and bake for approximately 25 minutes, or until a toothpick or skewer inserted into the center of the cake comes out clean and the surface feels springy to the touch.
- Remove the cake from the oven and allow it to cool completely in the tray. Once cooled, carefully lift it out and transfer it to a cutting board.
