- 400 g Schweinefilet (pork tenderloin) or pork loin
- 2 cans of mushrooms
- 2 cups (Becher) sweet cream (süße Sahne)
- 3 portions processed cheese (Schmelzkäse)
- 1 onion
- 40 g grated Emmental cheese
- Salt and pepper, to taste
- A small amount of cooking oil
Instructions
- Begin by preparing the pork tenderloin or pork loin. Rinse the meat under cold water and pat it dry thoroughly with paper towels to remove any excess moisture. Place the pork on a cutting board and slice it into moderately thick pieces, approximately 1.5 to 2 cm in thickness.
- Season the pork slices on both sides with salt and freshly ground pepper to taste. Heat a little cooking oil in a large nonstick skillet over medium-high heat. Once the oil is hot, add the pork slices in batches if necessary, and sear them for about 1-2 minutes per side until they are lightly browned but not fully cooked through. Remove the browned pork slices and set them aside on a plate.
- Peel and finely chop the onion. In the same skillet, add the chopped onion and sauté over medium heat until it becomes soft and translucent, about 3-4 minutes. Stir occasionally to prevent browning.
- Drain the canned mushrooms and add them to the skillet with the onions. Stir and let the mushrooms heat through for about 2 minutes.
- Add the sweet cream (süße Sahne) to the skillet, followed by the processed cheese portions (Schmelzkäse). Stir constantly until the cheese is fully melted and the sauce is smooth and creamy. Taste the sauce and adjust the seasoning with additional salt and pepper if desired.
- Preheat your oven to 150°C (302°F).
- Place the seared pork slices into a baking dish, arranging them in a single layer. Pour the hot creamy mushroom sauce evenly over the pork slices, ensuring all pieces are covered.
- Sprinkle the grated Emmental cheese generously over the top of the entire dish.
- Transfer the baking dish (uncovered) to the preheated oven. Bake for 20 minutes at 150°C, or until the cheese is melted, golden, and bubbling, and the pork is cooked through and tender.
- Remove the dish from the oven. Allow it to rest for a few minutes before serving. This dish is best served hot, accompanied by Rösti, rice, or French fries. Garnish with fresh herbs if desired.
Notes
For extra flavor, you can use a mix of fresh and canned mushrooms. Feel free to add a pinch of nutmeg or a splash of white wine to the sauce for a more aromatic touch. This dish pairs beautifully with crispy Rösti, fluffy rice, or golden French fries. Leftovers can be stored in an airtight container in the refrigerator for up to two days and reheated gently before serving.
