Description
Zarte Spaghetti umhüllt von cremiger Schinken-Sahne-Sauce mit samtigem Doppelrahmfrischkäse, feiner Würze von Muskat und Pfeffer. Goldbraune Zwiebeln verleihen dem Gericht Biss und einen herzhaften Geschmack.

- 200 g Nudeln, Spaghetti (Hartweizen)
- 1 TL Salz, für das Nudelwasser
- 100 g Schinken, gekocht, im Stück oder in Scheiben
- ¼ Liter süße Sahne
- 1 Pck. Doppelrahmfrischkäse (200 g)
- 1 Zwiebel(n)
- etwas Pfeffer, aus der Mühle
- etwas Muskat
- Salz
- etwas Öl, zum Anschwitzen der Zwiebel
- etwas Brühe, gekörnte zum Abschmecken der Sauce
- evtl. Petersilie, TK oder frisch zum Bestreuen, klein gehackt
Instructions
- Fill a large pot with plenty of water, add 1 teaspoon of salt to the water, and bring it to a rolling boil over high heat. This salted water will season the spaghetti during cooking.
- Once the water is boiling, add 200 grams of hard wheat spaghetti to the pot. Stir the noodles several times during the first few minutes of cooking to prevent them from sticking together. Continue cooking the spaghetti until they are al dente, meaning they are cooked but still firm to the bite. This usually takes about 8-10 minutes, but check the package instructions for exact timing.
- While the spaghetti is cooking, peel one onion and finely dice it into small cubes for even cooking and flavor release.
- If the cooked ham is in a block, cut 100 grams into small cubes. If it is already sliced, cut it into small rectangles. This will help the ham distribute evenly in the sauce.
- Heat a suitable-sized saucepan or pot over medium heat. Add a small amount of oil (such as vegetable or olive oil) to the pan and allow it to heat until shimmering but not smoking.
- Add the diced onions to the hot oil and sauté them gently, stirring regularly, until they become translucent and soft but not browned. This process usually takes about 3-5 minutes and helps to release the sweetness of the onions.
- Add the diced ham pieces to the pan with the onions and fry them briefly for about 1-2 minutes. This warms the ham and allows it to absorb some of the onion flavors without drying out.
- Pour in ¼ liter (250 ml) of sweet cream (süße Sahne) into the pan and stir to combine with the ham and onions.
- Add one package (200 grams) of double cream fresh cheese (Doppelrahmfrischkäse) to the pan. Using a small whisk or spoon, stir the fresh cheese into the cream mixture until it is fully incorporated and the sauce is smooth and creamy. Allow the sauce to come to a gentle boil while stirring occasionally to prevent sticking or burning.
- Season the sauce generously with salt, freshly ground pepper, and a pinch of grated nutmeg (Muskat). Add a small amount of powdered broth (gekörnte Brühe) to enhance the flavor of the sauce. Stir well and taste the sauce. Adjust seasoning as needed to ensure a rich and balanced flavor.
- Once the spaghetti are cooked to al dente, drain them in a colander to remove all the water. Shake gently to remove excess water but do not rinse, as rinsing removes the starch that helps the sauce cling to the noodles.
- Divide the drained spaghetti evenly onto individual serving plates. Spoon the warm ham cream sauce generously over the top of the spaghetti.
- Optionally, sprinkle freshly chopped parsley (either fresh or frozen) over the plated dish to add a fresh, herbal note and a pop of color.
- Serve the Spaghetti mit Schinken-Sahne-Sosse immediately while hot, accompanied by a crisp salad or crusty bread if desired.
Notes
For a richer flavor, you can use smoked ham instead of cooked ham, but adjust seasoning accordingly. Be careful not to overcook the onions to maintain their sweetness without bitterness. The sauce can be customized by adding a splash of white wine when sautéing the onions for extra depth. Use freshly grated nutmeg for best aroma. If the sauce is too thick, thin it with a small amount of milk or pasta water.
