Instructions
- Begin by peeling 1 to 2 onions and finely dicing them into small, uniform pieces to ensure even cooking and flavor distribution.
- Peel 1 to 2 cloves of garlic and mince them finely to release their aroma and flavor.
- Heat a suitable-sized pan over medium heat and add a small amount of oil or butter. Once hot, add the diced onions and minced garlic to the pan.
- Sauté the onions and garlic gently, stirring frequently, until the onions become translucent and slightly golden, which usually takes about 3 to 5 minutes. This process is called ‚glazing‘ and enhances the sweetness and aroma of the onions.
- Next, add 500 grams of spinach (preferably creamed spinach or Rahmspinat) directly to the pan with the onions and garlic. If using fresh spinach, make sure it is thoroughly washed and roughly chopped before adding.
- Pour in some milk (start with about 100 ml) to help loosen the mixture and create a creamy texture. The milk will also prevent the sauce from becoming too thick.
- Add 200 grams of herb-flavored cream cheese (Frischkäse) to the pan. Stir gently but thoroughly to combine the cream cheese with the spinach, onion, and garlic mixture.
- Increase the heat slightly and bring the entire mixture to a gentle boil while stirring continuously to avoid burning or sticking. This helps the flavors meld together and ensures a smooth sauce consistency.
- Once the sauce has come to a boil and is well combined, reduce the heat to low to maintain warmth without boiling over.
- Season the sauce by adding 1 tablespoon of fresh lemon juice, a pinch of salt, a pinch of freshly ground black pepper, and a pinch of sugar. Stir well to incorporate the seasoning evenly throughout the sauce.
- Taste the sauce and adjust the seasoning if necessary. If the sauce is too thick for your preference, gradually add more milk, stirring after each addition until the desired consistency is reached.
- Once the sauce is creamy, smooth, and well seasoned, remove the pan from heat. The spinach cream cheese sauce is now ready to be served immediately, perfect as a side or a flavorful topping.
