- 1 Stück Ei
- 1 Prise Salz
- 3 Esslöffel Mehl
- 3 Esslöffel Grieß (semolina)
- 3 Esslöffel Butter
- 3 Esslöffel Brösel (breadcrumbs)
- 1 Esslöffel Zucker
Instructions
- Begin by preparing the dough: In a medium mixing bowl, combine the Topfen (quark), egg, a pinch of salt, flour, and semolina. Mix all ingredients thoroughly using a wooden spoon or spatula until a smooth and homogeneous dough forms. Make sure there are no lumps of flour or semolina in the mixture.
- Once the dough is well mixed, cover the bowl and let the dough rest for 10 minutes at room temperature. This allows the semolina to absorb moisture and helps the dough firm up, making it easier to shape later.
- While the dough is resting, fill a large pot with water and add a generous pinch of salt. Bring the salted water to a boil over high heat. Once it reaches a boil, reduce the heat so that the water simmers gently.
- After the resting time, use two wet dessert spoons to form small oval dumplings (Nockerl) from the dough. Scoop up a portion of dough with one spoon and shape it with the second spoon, transferring the shaped dumpling directly into the simmering water. Repeat this process until all the dough is used up.
- Let the dumplings cook gently in the simmering water for about 15 minutes. The water should not be boiling vigorously to prevent the dumplings from breaking apart. The dumplings are ready when they rise to the surface and feel firm to the touch.
- While the dumplings are cooking, prepare the breadcrumb coating: In a large non-stick frying pan, melt the butter over medium heat. Once the butter is melted and starts to foam, add the breadcrumbs and sugar. Stir continuously and roast the mixture for several minutes until the breadcrumbs are golden brown and fragrant. Be careful not to burn the breadcrumbs.
- When the dumplings are cooked, use a slotted spoon to carefully lift them out of the water, allowing excess water to drain off. Place the hot dumplings directly into the pan with the buttered breadcrumbs.
- Gently roll and turn the dumplings in the breadcrumb mixture until they are evenly coated on all sides. Ensure that each dumpling is fully covered with the sweet, golden crumbs.
- Transfer the finished Topfennockerl mit Brösel to serving plates. Serve warm, optionally dusted with a bit more sugar or accompanied by a side of applesauce or fruit sauce.
Notes
