  • 80 g Mehl
  • 250 g Topfen (Quark)
  • 3 Eier
  • 0.125 l Schlagobers (whipping cream)
  • 2 TL Backpulver
  • 1 Prise Salz
  • 3 EL Pflanzenöl (zum Ausbacken)
  • 70 g Weizengrieß (semolina)
  • 80 g Staubzucker (powdered sugar, for dusting)
  • 2 EL Rosinen (optional, nach Wunsch)

Instructions

  1. Begin by preparing all your ingredients. Measure out the flour, semolina, baking powder, and powdered sugar. Separate the eggs if you prefer a fluffier texture, but you can also use them whole. If you wish to include raisins, soak them briefly in warm water and drain them.
  2. In a large mixing bowl, combine the flour, topfen (quark), eggs, whipping cream, semolina, baking powder, and a pinch of salt. If you are using raisins, add them now. Use a whisk or an electric mixer to mix everything together until you achieve a thick, smooth batter. If the batter is too thick, add a little milk to loosen it. If it is too thin, mix in a bit more flour.
  3. Heat a large, high-sided nonstick frying pan over medium heat. Once hot, add 3 tablespoons of vegetable oil and swirl to coat the bottom of the pan evenly.
  4. Pour about one quarter of the batter into the hot pan, spreading it out evenly to form a thick pancake. Let it cook undisturbed for several minutes until the underside is golden brown and the top begins to set.
  5. Using a spatula, carefully divide the pancake into four sections while it is still in the pan. This will make flipping and handling easier. Flip each section over and allow the other side to cook until golden brown.
  6. Once both sides are cooked, use two forks to tear or cut the sections into smaller, bite-sized pieces. Continue cooking these pieces in the pan for a few more minutes, stirring occasionally, until all the pieces are golden and slightly crispy on the edges.
  7. Remove the finished Topfenschmarren from the pan and place it on a serving platter. Sprinkle generously with powdered sugar while still warm.
  8. Serve immediately, ideally with your favorite accompaniments such as applesauce, fruit preserves, chocolate spread, or fresh fruit. Enjoy your homemade Topfenschmarren while it is still warm and fluffy.

Notes

For extra flavor, you can add a splash of vanilla extract or a little lemon zest to the batter. Topfenschmarren tastes best when freshly made and served warm.
