- Take 2 salad cucumbers and peel them thoroughly with a vegetable peeler to remove the skin. Next, use a coarse grater to grate the peeled cucumbers into thin, small shreds. Transfer the grated cucumber into a separate medium-sized bowl. Sprinkle 1 teaspoon of salt evenly over the grated cucumber to help draw out excess water. Let the salted cucumber sit for about 5 to 10 minutes, allowing it to release moisture and become less watery.
- After the cucumbers have rested, take handfuls of the grated cucumber and press them firmly using your hands or a clean kitchen towel to squeeze out as much liquid as possible. This step is crucial to prevent the tzatziki from becoming too watery and ensures a thick, creamy consistency. Once well-drained, add the squeezed grated cucumber to the bowl with the garlic and yogurt mixture.
