- 1 Tasse Brösel (breadcrumbs)
- 4 Stück Zwiebeln (onions)
- 1 Bund Petersilie (bunch of parsley)
- 3 Esslöffel Öl (oil)
- 600 g Faschiertes (ground meat, e.g. beef or mixed)
- 1 Prise Salz und Pfeffer (pinch of salt and pepper)
- 250 g Speck (slices of bacon)
- 40 g Wacholderbeeren (juniper berries)
Instructions
- Preheat your oven to 180°C (356°F) to ensure it is hot and ready for baking the meatloaf. While the oven is heating, peel the onions and chop them finely into small pieces.
- Heat 1 tablespoon of the oil in a skillet over medium heat. Add the chopped onions and sauté them gently, stirring occasionally, until they become translucent and soft. Take care not to brown them. Remove from heat and set aside to cool slightly.
- Wash the parsley thoroughly under cold water to remove any dirt. Shake it dry or pat with paper towels, then finely chop the parsley leaves and tender stems.
- In a large mixing bowl, combine the ground meat, breadcrumbs, sautéed onions, chopped parsley, a pinch of salt and pepper. Add the egg to the bowl. Using clean hands or a sturdy spoon, mix all the ingredients together thoroughly until a uniform, cohesive mass forms.
- Lightly grease a baking dish or ovenproof casserole with 1 tablespoon of oil to prevent sticking. Lay the bacon slices across the bottom and up the sides of the dish, allowing the ends of the bacon to hang over the sides. This will be used to wrap the meatloaf later.
- Transfer the prepared meat mixture into the bacon-lined baking dish. Use your hands or a spatula to press the mixture firmly into the dish, making sure it is evenly distributed and tightly packed.
- Fold the overhanging bacon strips over the top of the meat mixture, completely covering it. If necessary, use additional bacon slices to ensure the top is fully covered.
- Scatter the juniper berries evenly over the top of the bacon-wrapped meatloaf. Drizzle the remaining oil (about 1 tablespoon) over the top to help the bacon crisp and flavor permeate the meat.
- Place the baking dish in the preheated oven on the middle rack. Bake for about 30 minutes, or until the bacon is golden and slightly crisp, and the meatloaf is cooked through. The internal temperature should reach at least 70°C (160°F).
- Once done, remove the dish from the oven and let the Wacholderbraten rest for 5-10 minutes. This makes it easier to slice. Serve in thick slices accompanied by fresh white bread, and enjoy the distinctive aroma and flavor from the juniper berries.
Notes
Statt Zwiebeln können sie auch Lauch verwenden. If you prefer, you can substitute onions with leeks for a slightly different flavor. Use fresh juniper berries for the best aroma, and serve with crusty white bread or your favorite side dishes. Leftovers can be enjoyed cold or gently reheated.
