Instructions

  1. Begin by preparing the onions. Peel the red onions and cut them in half. Lay each half flat on the cutting board and slice them into thin half-rings. Set aside.
  2. Open the can of pineapple and pour the contents into a sieve placed over a bowl to drain the juice. Reserve at least 2 tablespoons of the pineapple juice for the dressing. Set the pineapple pieces aside to drain thoroughly.
  3. In a medium mixing bowl, prepare the dressing by combining the mayonnaise, lemon juice, reserved pineapple juice, sweet paprika powder, and chili powder. Use a whisk or spoon to mix the ingredients together until the dressing is smooth and well blended.
  4. Add the drained pineapple pieces and the sliced onion half-rings to the bowl with the dressing. Gently fold all the ingredients together, ensuring the pineapple and onions are evenly coated with the dressing.
  5. Season the salad mixture with salt to taste. Mix again to incorporate the seasoning evenly throughout the salad.
  6. Cover the bowl with plastic wrap or a lid and place the salad in the refrigerator. Allow it to chill and marinate for at least 15 minutes. This resting time helps the flavors to meld and develop.
