  • Salz

  • 3 EL Mehl
  • 65 g Butter
  • 500 g Zwiebeln, in Ringe geschnitten
  • Knoblauch, nach Geschmack
  • 200 g Sahne, süß
  • 200 g Käse, gerieben

Instructions

  1. Begin by preparing your ingredients: Slice 500 g of onions into rings and mince the desired amount of garlic. Preheat a large skillet over medium-high heat.
  2. Season the 4 pork schnitzels generously on both sides with salt and pepper. Dredge each schnitzel in flour, coating them evenly and shaking off any excess.
  3. In a large skillet, melt about 30 g of the butter over medium-high heat. Once the butter is sizzling, add the floured schnitzels and fry them on both sides until they develop a golden-brown crust and are cooked through, about 2-3 minutes per side. Remove the schnitzels from the pan and place them in a single layer in a greased, shallow baking or casserole dish.
  4. Add the remaining butter to the same skillet. Once melted, add the sliced onion rings and sauté them over medium heat, stirring occasionally, until they become soft and translucent, about 10-12 minutes. If desired, add the minced garlic and continue to sauté for another 1-2 minutes until fragrant. For extra flavor, you may also season with a pinch of thyme and marjoram at this stage.
  5. Evenly spread the sautéed onions (and garlic, if used) over the schnitzels in the baking dish. Pour the sweet cream (200 g Sahne) evenly over the onions and schnitzels.
  6. Cover the baking dish with foil and place it in the refrigerator. Allow the dish to marinate overnight so the flavors can develop and the schnitzels become especially tender.
  7. The next day, remove the dish from the refrigerator. Sprinkle the grated cheese evenly over the top of the onions and schnitzels.
  8. Place the baking dish in a cold oven. Set the oven to 200°C (392°F) and allow it to preheat with the dish inside. Once the oven reaches temperature, bake the schnitzel casserole for about 20 minutes, or until the cheese is golden and bubbling.
  9. After baking, turn off the oven and let the dish rest inside for an additional 5 minutes. This allows everything to set nicely and the flavors to meld further.
  10. Carefully remove the baking dish from the oven. Serve the Zwiebel Schnitzel Mit Sahne hot, ideally with fresh baguette to soak up the creamy onion sauce.

Notes

For extra flavor, consider adding a pinch of dried thyme or marjoram when sautéing the onions. Allowing the dish to rest overnight is key for tender schnitzels and deep flavor, but if you are short on time, you can marinate for at least 2-3 hours. Use any melting cheese you like, such as Gouda, Emmental, or Mozzarella. The dish pairs perfectly with fresh, crusty bread or a simple green salad.
