Description

Zart gebackene Brotscheiben, getränkt in einer cremig-süßen Eiermilch, goldbraun überzogen mit geschmolzener Butter, duften verführerisch. Außen knusprig, innen samtig-weich, mit feiner Karamellnote und unwiderstehlichem Glanz.

  • 8 slices white bread (possibly more as needed)
  • 3 eggs
  • 400 ml milk
  • 80 g sugar
  • 80 g butter

Instructions

  1. Preheat your oven to 200°C (392°F) with both top and bottom heat to ensure even baking.
  2. In a large baking dish or casserole, crack the eggs and pour in the milk. Whisk the eggs and milk together thoroughly until the mixture is smooth and the eggs are fully incorporated.
  3. Add the sugar to the milk and egg mixture. Stir well to dissolve the sugar completely so that the mixture is evenly sweetened.
  4. Arrange the slices of white bread in the baking dish so that the entire bottom of the dish is covered. If you are using a round dish, tear 2 of the slices into pieces and fit them along the edges to make sure there are no gaps.
  5. Using a fork, gently press the bread slices down into the liquid mixture. This helps the bread absorb the milk, egg, and sugar mixture more quickly and evenly. Let the bread soak for about 5 minutes, or until the slices have absorbed most of the liquid. There should be very little liquid left visible when you gently move the bread aside.
  6. Cut the butter into small pieces or flakes. Evenly distribute the butter pieces over the top of the soaked bread in the baking dish. The butter will melt during baking and help create a golden, flavorful crust.
  7. Place the baking dish on the middle rack of the preheated oven. Bake for approximately 20 minutes, or until the casserole has puffed up and the top is golden brown. Check to ensure that the center is set and not overly moist.
  8. Remove the Arme-Ritter-Auflauf from the oven and allow it to cool for a few minutes before serving. This dish can be enjoyed on its own or served with accompaniments such as applesauce, vanilla sauce, or fresh fruit.

Notes

If you notice there is still too much liquid left after soaking the bread, simply tear up another slice of white bread and add it to the dish to absorb the excess. For added flavor, you can sprinkle cinnamon or vanilla sugar over the top before baking. This recipe is a great way to use up day-old or slightly stale bread.
