- 1 pinch salt
- 1 liter milk
- 2 eggs
- 8 slices white bread, toast, or halved bread rolls
- Butter or oil for frying (amount as needed)
Instructions
- In a large mixing bowl, crack the eggs and add the milk, sugar, and salt. Whisk the mixture thoroughly until the sugar and salt are completely dissolved and everything is well combined. The mixture should be smooth and uniform in texture.
- Arrange the slices of white bread, toast, or halved bread rolls in a large, shallow dish or tray. Pour the egg-milk mixture evenly over the bread slices, making sure each slice is well soaked. Let the bread absorb the liquid for about 5–10 minutes, turning the slices halfway through so both sides soak up the mixture evenly. The bread should be moist but not falling apart.
- While the bread is soaking, heat a generous amount of butter or oil in a large nonstick skillet or frying pan over medium heat. You want enough fat to cover the bottom of the pan so the bread doesn’t stick and browns evenly.
- Carefully lift the soaked bread slices from the dish, allowing any excess liquid to drip off. Place the bread slices in the hot pan, being careful not to overcrowd the pan. Depending on the size of your pan, you may need to work in batches.
- Fry the bread slices on medium heat for about 2–3 minutes per side, or until each side is golden brown and crisp. Use a spatula to gently flip the slices to avoid breaking them. Adjust the heat as needed to prevent burning.
- Once the bread slices are golden and cooked through, remove them from the pan and place them on a plate lined with paper towels to absorb any excess fat. Repeat with the remaining slices, adding more butter or oil to the pan as needed.
- Serve the Arme Ritter warm. You can dust them with extra sugar, cinnamon, or serve with fruit compote, jam, or a dollop of sour cream (Schmand) according to your preference. Enjoy immediately for the best texture and flavor.
Notes
Arme Ritter taste best when made with slightly stale bread, as it absorbs the egg-milk mixture better without falling apart. You can customize the toppings according to your taste—try sprinkling with cinnamon sugar, serving with fresh berries, or drizzling with honey or maple syrup. For a richer flavor, you can substitute part of the milk with cream. Serve immediately after frying for the crispiest result.
