- 1 Bund Bärlauch
- 3 Stück Knoblauchzehen
- 300 g Semmelwürfel
- 150 g Käse (gerieben)
- 3 Stück Eier
- 150 ml Milch
- 1 Prise Salz und Pfeffer
- 5 EL Olivenöl
- 3 EL Mehl
Instructions
- Begin by thoroughly washing the bunch of Bärlauch (wild garlic) under cold running water to remove any dirt or impurities. After washing, use a clean kitchen towel or salad spinner to pat the leaves dry. Place the Bärlauch on a cutting board and finely chop it into small pieces.
- Peel the garlic cloves and either finely chop them with a knife or press them through a garlic press to achieve a fine consistency. Set the chopped or pressed garlic aside.
- In a large mixing bowl, add the Semmelwürfel (bread cubes). Pour the milk evenly over the bread cubes to moisten them. Crack the eggs into the bowl, add the grated cheese, chopped Bärlauch, and the prepared garlic. Season the mixture generously with a pinch of salt and freshly ground black pepper.
- Using a large spoon or your hands, thoroughly mix all the ingredients in the bowl until everything is well combined and the bread cubes are evenly coated with the egg and milk mixture. The mixture should be moist and cohesive but not runny.
- Cover the bowl with a clean kitchen towel or plastic wrap and let the mixture rest for about 30 minutes at room temperature. This allows the bread cubes to absorb the liquid and the flavors to meld together.
- After resting, sprinkle the flour over the mixture. Use your hands or a spoon to incorporate the flour evenly into the mixture. The dough should now hold its shape when formed into patties.
- With damp hands, take portions of the mixture and shape them into small, evenly sized patties (Laibchen), about the size of your palm and approximately 1–2 centimeters thick. Place the formed patties on a tray or plate.
- Heat the olive oil in a large non-stick frying pan over medium heat. Once the oil is hot and shimmering, carefully place the patties into the pan, making sure not to overcrowd them. Fry the patties for about 3–4 minutes on each side, or until they are golden brown and crispy on the outside.
- Once the Bärlauch-Laibchen are cooked through and nicely browned on both sides, use a slotted spatula to transfer them to a plate lined with paper towels to drain any excess oil.
- Serve the Bärlauch-Laibchen hot, optionally accompanied by a fresh herb dip or your favorite sauce. Enjoy as a main dish or as a savory snack.
Notes
For extra flavor, serve the Bärlauch-Laibchen with a homemade herb dip or a tangy yogurt sauce. You can substitute the type of cheese to your liking; a stronger cheese such as Emmental or mountain cheese works particularly well. Make sure to let the mixture rest before shaping the patties to ensure they hold together while frying. These vegetarian patties are best enjoyed fresh and hot, but they can also be reheated gently in the oven.
