  • 250 g Nudeln
  • 2 EL Olivenöl
  • 100 ml Weißwein
  • 1 Becher Schlagobers (cream)
  • 4 Schalotten
  • 1 Prise Salz und Pfeffer
  • 200 g Bärlauch (wild garlic)
  • 3 Knoblauchzehen

Instructions

  1. Bring a large pot of salted water to a boil. Add the noodles and cook them according to the package instructions until they are al dente. Once cooked, drain the noodles and set them aside.
  2. While the noodles are cooking, prepare the vegetables. Peel the garlic cloves and the shallots. Finely chop both the garlic and the shallots. Wash the wild garlic (Bärlauch) thoroughly under cold running water to remove any dirt, then pat it dry with a clean kitchen towel. Finely slice the wild garlic leaves.
  3. Heat the olive oil in a large skillet or frying pan over medium heat. Add the chopped garlic and shallots to the pan and sauté them gently for about 2-3 minutes, stirring frequently, until they become soft and translucent but not browned.
  4. Pour the white wine into the pan with the sautéed garlic and shallots. Allow it to simmer for 1-2 minutes so that the alcohol can evaporate and the flavors can blend. Then add the cream (Schlagobers) to the pan, stirring well to combine it with the wine and aromatics. Let the sauce simmer for another 2-3 minutes until it begins to thicken slightly.
  5. Add the finely sliced wild garlic to the pan. Stir well so it is evenly distributed throughout the sauce. Season the sauce with a pinch of salt and freshly ground black pepper to taste. Allow the sauce to simmer for another 1-2 minutes, just until the wild garlic is wilted and vibrant green.
  6. Add the drained noodles to the pan with the sauce. Toss everything together thoroughly, ensuring that the noodles are fully coated with the creamy wild garlic sauce. If the sauce is too thick, you can add a splash of the reserved pasta cooking water to loosen it.
  7. Serve the Bärlauch-Nudeln immediately while hot. Optionally, you can garnish with additional wild garlic leaves or a sprinkle of freshly ground black pepper. Enjoy your fresh and aromatic spring pasta dish!

Notes

Verwenden Sie nur junge Blätter, da sie besonders zart und aromatisch sind. Wenn Sie keinen Weißwein verwenden möchten, können Sie diesen durch Gemüsebrühe ersetzen. Für eine vegane Variante können Sie pflanzliche Sahne verwenden.
