  • 200 g hard cheese (Hartkäse)
  • 100 g salami
  • 100 g wurst (sausage)
  • 1 egg
  • Herbs of your choice (kitchen herbs)
  • 2 tablespoons ketchup

Instructions

  1. Preheat your oven to 200°C (392°F) so it is ready for baking once you have prepared the pastry roll.
  2. If your puff pastry is not already rolled out, place it on a clean, lightly floured surface and use a rolling pin to roll it into a thin, even rectangle. If you have store-bought, pre-rolled puff pastry, simply unroll it onto a sheet of parchment paper.
  3. Evenly spread the ketchup over the entire surface of the puff pastry, using the back of a spoon or a pastry brush to ensure it covers all the way to the edges.
  4. Sprinkle your chosen kitchen herbs generously over the layer of ketchup. This will infuse the roll with aromatic flavor.
  5. Grate or thinly slice the hard cheese and distribute it evenly over the pastry, creating a uniform layer.
  6. Slice the salami and wurst (sausage) into thin rounds or strips, then arrange them evenly over the cheese layer, ensuring that all areas are covered with a mix of both meats.
  7. Starting from one long side, carefully and tightly roll up the puff pastry with the fillings inside, creating a log-shaped roll. Make sure the seam is facing down to help seal the roll.
  8. Transfer the rolled pastry onto a baking sheet lined with parchment paper, keeping the seam side down to prevent unrolling during baking.
  9. Crack the egg into a small bowl and beat it well with a fork. Using a pastry brush, evenly coat the surface of the pastry roll with the beaten egg. This will give the roll a golden, shiny finish after baking.
  10. If desired, sprinkle additional herbs or spices of your choice on top of the egg-washed pastry for extra flavor and visual appeal.
  11. Place the baking sheet with the prepared roll into the preheated oven. Bake at 200°C (392°F) for approximately 30 minutes, or until the pastry is puffed up, crisp, and golden brown. Keep a close eye on it toward the end of baking to avoid over-browning.
