- 1 kg Blaukraut (Rotkohl)
- 2 Äpfel
- 1 EL Zucker
- 1 Zwiebel
- 5 EL Öl
- 1 Schuss Essig
- 250 ml Wasser
- 1 Schuss Rotwein
- 1 Prise Salz
- 1 Prise Pfeffer
- 2 Lorbeerblätter
Instructions
- Begin by preparing the Blaukraut (red cabbage). Remove any damaged outer leaves, then thoroughly wash the cabbage under cold running water. Cut the cabbage in half, remove the hard core (Strunk), and use a sharp knife or mandoline to finely slice or shred the cabbage into thin strips. Set the shredded cabbage aside.
- Peel the onion and finely chop it into small pieces. In a large pot or Dutch oven, heat the oil over medium heat. Add the chopped onion and sauté gently until it becomes translucent and fragrant, taking care not to let it brown.
- While the onion is cooking, peel the apples, remove the cores, and cut them into small cubes. Add the apple cubes to the onions in the pot, then sprinkle in the sugar. Stir everything together and let the mixture cook for about 5 minutes, stirring occasionally, until the apples begin to soften and the sugar has dissolved, creating a slightly caramelized base.
- Add the prepared Blaukraut to the pot and pour in a splash of vinegar. Stir to combine all the ingredients well. Cover the pot with a lid and let the mixture cook over low heat for about 10 minutes, allowing the cabbage to begin softening and absorbing the flavors.
- After 10 minutes, pour in the water and add a pinch of salt, a pinch of pepper, and the bay leaves. Stir everything thoroughly so that the seasonings are evenly distributed. Cover the pot again and let the cabbage simmer gently over low heat for about 35 minutes, stirring occasionally to prevent sticking. The cabbage should become tender and flavorful.
- Just before serving, pour in a splash of red wine and stir well. Taste the Blaukraut and adjust the seasoning with additional salt, pepper, or vinegar if desired. Remove the bay leaves before serving. Serve the Blaukraut hot as a delicious side dish.
Notes
For an even deeper flavor, you can prepare the Blaukraut a day in advance and reheat it before serving; the flavors will meld and intensify overnight. If you prefer a sweeter dish, you can add more sugar or a grated pear along with the apples. For extra spice, consider adding a pinch of ground cloves or a cinnamon stick during simmering. Blaukraut pairs especially well with roast meats, duck, or sausages.
