In 20 Minuten zaubert diese Nudelpfanne cremig-zarte Pasta in würziger Brühe, umhüllt von schmelzender Crème fraîche, pikantem Tomatenmark, knuspriger Salami, zartem Schinken, süßem Mais und goldener Zwiebel.

- 125 g Nudeln
- 500 ml Brühe
- 2 EL Crème fraîche
- 1 EL Tomatenmark
- 5 Scheiben Salami
- 5 Scheiben Schinken
- 1 Zwiebel
- 1/2 Dose Mais
- 2 Tomaten
- Salz
- Pfeffer
- Oregano
- Tabasco
- Knoblauchpulver
- Basilikum
- Koriander, gemahlen
Instructions
- Begin by preparing all your ingredients. Peel the onion and dice it into small cubes. Cut the salami and the ham each into thin strips. Wash the tomatoes and dice them into small pieces. Drain the corn if using canned.
- Place a large, deep frying pan or skillet over medium heat and add a small amount of oil. Once the oil is hot, add the diced onion and sauté for 2-3 minutes until it becomes translucent and fragrant.
- Add the strips of salami and ham to the pan. Sauté everything together for another 2-3 minutes, stirring occasionally, until the meats begin to brown slightly and release their flavors.
- Add the diced tomatoes to the pan and stir well. Cook for about 2 minutes, allowing the tomatoes to soften and blend with the other ingredients.
- Pour the uncooked pasta into the pan, followed by the drained corn and the vegetable or chicken broth. Stir everything to combine. At this stage, add the following seasonings to taste: salt, pepper, oregano, Tabasco (a few dashes for heat), a pinch of garlic powder, some dried basil, and a small pinch of ground coriander. Stir well so the seasonings are evenly distributed.
- Increase the heat and bring the mixture to a gentle boil. Once it starts boiling, reduce the heat to medium-low, cover the pan with a lid, and let it simmer for about 5 minutes. Stir occasionally to prevent the pasta from sticking to the bottom.
- After 5 minutes of simmering, add the crème fraîche and the tomato paste to the pan. Stir thoroughly to combine, making sure the crème fraîche and tomato paste are fully incorporated into the sauce.
- Cover the pan again and continue to simmer on medium-low heat for another 5 minutes, or until the pasta is cooked al dente and has absorbed most of the liquid. Stir once or twice during this time. If the sauce becomes too thick or starts to dry out before the pasta is cooked, add a splash of milk to loosen the sauce and continue cooking.
- Taste the pasta and adjust the seasoning as desired with more salt, pepper, or additional herbs. Give everything a final stir and ensure the pasta is coated evenly with the creamy, flavorful sauce.
- Optional: For an extra cheesy finish, sprinkle some shredded mozzarella over the pasta while it is still hot in the pan. Cover the pan with the lid and allow the mozzarella to melt for 2-3 minutes. Once melted, serve immediately.

You can customize this dish by adding other vegetables such as bell peppers or zucchini for added nutrition and flavor. If you prefer a vegetarian version, simply omit the salami and ham and use more vegetables or a meat alternative. Adjust the spiciness to your liking with the amount of Tabasco. Adding a handful of shredded mozzarella at the end creates a deliciously cheesy topping. If the sauce is too thick before the noodles are fully cooked, you can add a little more broth or milk.
