- 300 g mixed ground meat
- 1 small onion
- 1 clove garlic
- 1 tablespoon breadcrumbs
- 1 egg
- 1 tablespoon parsley
- 1 teaspoon hot paprika powder
- 1 teaspoon sweet paprika powder
- Salt and pepper
- 2 pickled gherkins
- 2 slices cheese
- 8 slices bacon
- Some chives
Instructions
- Begin by preparing the vegetables and herbs. Peel the onion and garlic, then cut both into very small cubes. Wash and finely chop the parsley. Set these aside for later use.
- In a large mixing bowl, place the mixed ground meat. Add the breadcrumbs and crack in the egg. Add the finely chopped onion, garlic, and parsley to the bowl. Sprinkle in both the hot and sweet paprika powders. Season the mixture generously with salt and pepper.
- Using clean hands, thoroughly mix and knead all the ingredients together until a uniform, well-combined meat mixture forms. This ensures that the flavors are evenly distributed throughout the meat.
- Lightly sprinkle some breadcrumbs over your work surface to prevent sticking. Divide the meat mixture into six equal portions. Take each portion and, using your hands, shape it into a rectangle roughly 7 cm by 15 cm in size. Lay each rectangle flat on the breadcrumb-dusted surface.
- Slice the pickled gherkins and cheese into thin strips. Place a few strips of gherkin and cheese lengthwise along the center of each meat rectangle. Lay a few pieces of chive on top of the filling.
- Carefully roll up each meat rectangle around the filling to form a tight cylinder, ensuring that the filling stays in the center. Take two slices of bacon per roll and wrap them around each meat roll, making sure to cover the seam. This will hold the roll together and add flavor.
- Grease a baking dish or ovenproof form with a little oil or butter to prevent sticking. Place each bacon-wrapped meat roll, seam side down, into the dish. Arrange them so they are not touching each other to allow even cooking.
- Preheat your oven to 180°C (356°F). Once at temperature, place the baking dish in the oven and bake for approximately 30 minutes. The bacon will become crispy, and the meat will cook through.
- After baking, remove the dish from the oven. Allow the cevapcici to rest for a few minutes before serving. Serve hot with your choice of side dishes, such as rice, colorful sautéed peppers, potato salad, mixed salad, potatoes, or mashed potatoes with browned onion rings and paprika sauce.
Notes
For extra flavor, serve the cevapcici im Speckmantel with mashed potatoes topped with browned onion rings and a paprika sauce. You can also customize the filling by adding your favorite cheese or vegetables. Make sure to wrap the bacon tightly so it holds the meat rolls together during baking.
