  • 100 g Champignons
  • 1 TL Pflanzenöl
  • 150 ml Gemüsebrühe
  • 2 EL Frischkäse, bis 1% Fett
  • Senf
  • Salz und Pfeffer
  • 1 TL Saucenbinder, hell

Instructions

  1. Begin by peeling the small onion. Once peeled, dice the onion into small, even pieces to ensure they cook uniformly.
  2. Clean the champignons (mushrooms) by gently wiping them with a damp cloth or paper towel to remove any dirt. Then, slice the champignons into thin, even slices for an optimal texture in the sauce.
  3. Heat 1 teaspoon of vegetable oil in a medium-sized frying pan over medium heat. Wait until the oil is hot but not smoking.
  4. Add the diced onions to the heated oil and sauté them for about 2-3 minutes until they become translucent and slightly golden. This step helps to develop the flavor base of the sauce.
  5. Next, add the sliced champignons to the pan with the onions. Continue sautéing both together for about 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown slightly.
  6. Pour 150 ml of vegetable broth into the pan with the sautéed onions and mushrooms. Increase the heat slightly to bring the mixture to a gentle simmer. Let it simmer for about 3-4 minutes to combine the flavors and reduce the liquid slightly.
  7. Reduce the heat to low. Add 2 tablespoons of low-fat cream cheese (up to 1% fat) to the pan. Stir continuously until the cream cheese melts completely and blends smoothly into the broth, creating a creamy texture.
  8. Add a small amount of mustard (to taste) to the sauce. Start with about half a teaspoon, stir it in, and adjust according to your preference for a subtle tangy flavor.
  9. Season the sauce with salt and freshly ground black pepper. Taste the sauce and add more seasoning if needed to balance the flavors.
  10. To thicken the sauce, sprinkle 1 teaspoon of light sauce thickener evenly over the sauce while stirring constantly. Continue to cook on low heat for another 1-2 minutes until the sauce reaches your desired consistency.
  11. Once thickened, remove the pan from heat. Give the sauce a final stir and serve it warm as a delicious accompaniment to your favorite dishes.

Notes

You can adjust the amount of mustard to your taste for a milder or stronger flavor. For a richer sauce, consider substituting the low-fat cream cheese with a full-fat version or adding a splash of cream. The sauce thickener can be replaced with a cornstarch slurry if preferred. This sauce pairs wonderfully with meat, pasta, or vegetable dishes.
