Description
Ingredients
Scale
- 1 kleine Zwiebel(n)
- 100 g Champignons
- 1 TL Pflanzenöl
- 150 ml Gemüsebrühe
- 2 EL Frischkäse, bis 1% Fett
- Senf
- Salz und Pfeffer
- 1 TL Saucenbinder, hell
Instructions
- Begin by peeling the small onion. Once peeled, dice the onion into small, even pieces to ensure they cook uniformly.
- Clean the champignons (mushrooms) by gently wiping them with a damp cloth or paper towel to remove any dirt. Then, slice the champignons into thin, even slices for an optimal texture in the sauce.
- Heat 1 teaspoon of vegetable oil in a medium-sized frying pan over medium heat. Wait until the oil is hot but not smoking.
- Add the diced onions to the heated oil and sauté them for about 2-3 minutes until they become translucent and slightly golden. This step helps to develop the flavor base of the sauce.
- Next, add the sliced champignons to the pan with the onions. Continue sautéing both together for about 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown slightly.
- Pour 150 ml of vegetable broth into the pan with the sautéed onions and mushrooms. Increase the heat slightly to bring the mixture to a gentle simmer. Let it simmer for about 3-4 minutes to combine the flavors and reduce the liquid slightly.
- Reduce the heat to low. Add 2 tablespoons of low-fat cream cheese (up to 1% fat) to the pan. Stir continuously until the cream cheese melts completely and blends smoothly into the broth, creating a creamy texture.
- Add a small amount of mustard (to taste) to the sauce. Start with about half a teaspoon, stir it in, and adjust according to your preference for a subtle tangy flavor.
- Season the sauce with salt and freshly ground black pepper. Taste the sauce and add more seasoning if needed to balance the flavors.
- To thicken the sauce, sprinkle 1 teaspoon of light sauce thickener evenly over the sauce while stirring constantly. Continue to cook on low heat for another 1-2 minutes until the sauce reaches your desired consistency.
- Once thickened, remove the pan from heat. Give the sauce a final stir and serve it warm as a delicious accompaniment to your favorite dishes.
Notes
You can adjust the amount of mustard to your taste for a milder or stronger flavor. For a richer sauce, consider substituting the low-fat cream cheese with a full-fat version or adding a splash of cream. The sauce thickener can be replaced with a cornstarch slurry if preferred. This sauce pairs wonderfully with meat, pasta, or vegetable dishes.
