Description

Dieser Auflauf stammt eindeutig aus Omas Küche. Das Rezept Scheiterhaufen wird mit Semmeln, Äpfeln, Rosinen und Zimt gebacken.


Ingredients

  • 250 g Semmel (or Milchstriezel)
  • 0.5 l milk
  • 4 eggs
  • 80 g sugar
  • 1 pinch salt
  • 5 apples
  • 3 tablespoons raisins
  • 2 tablespoons rum
  • 1 pinch cinnamon
  • 1 packet vanilla sugar

Instructions

  1. Cut the Semmel (or Milchstriezel) into thin slices. Arrange the slices in a large bowl or on a tray so they are ready for soaking.
  2. In a mixing bowl, pour in the milk. Crack the eggs into the bowl and add the sugar, vanilla sugar, and a pinch of salt. Whisk the mixture thoroughly until all the ingredients are well blended and the sugar has dissolved.
  3. Combine a small amount of water with the rum in a separate bowl. Add the raisins and let them soak for about 10 minutes. This will plump up the raisins and infuse them with flavor.
  4. While the raisins soak, peel the apples using a vegetable peeler. Remove the cores, then slice the apples thinly into even, fine slices so they will bake evenly.
  5. Preheat your oven to 200°C (about 390°F) using top and bottom heat (Ober-/Unterhitze). Prepare a baking dish or casserole by brushing the inside generously with butter. This prevents sticking and adds flavor.
  6. In a medium bowl, mix the sliced apples, soaked raisins (including any remaining rum), and a pinch of cinnamon. Toss everything together so the apples and raisins are evenly coated with cinnamon.
  7. Take the sliced Semmel (or Milchstriezel) and dip each piece thoroughly in the egg-milk mixture, ensuring both sides are well soaked but not falling apart.
  8. Layer the soaked Semmel slices and the apple-raisin mixture alternately in the prepared baking dish. Start with a layer of Semmel, then add a layer of the apple-raisin mixture, and repeat until all ingredients are used up. Finish with a layer of Semmel on top.
  9. Pour any remaining egg-milk mixture evenly over the layered ingredients in the baking dish, making sure everything is well moistened.
  10. Place the baking dish in the preheated oven and bake for approximately 40 minutes. The top should be golden brown and the apples tender when tested with a fork.
  11. Remove the Scheiterhaufen from the oven and allow it to cool slightly before serving. This helps the pudding set and makes it easier to portion.

Notes

You can use day-old or slightly stale Semmel or Milchstriezel for this recipe, making it a great way to use up leftover bread. The finished Scheiterhaufen is delicious served warm, optionally dusted with powdered sugar or accompanied by vanilla sauce. Adjust the sweetness and cinnamon to your taste.
