  • 500 g Mehl (flour)
  • 0.5 Päckchen Backpulver (baking powder)
  • 0.5 l Milch (milk)
  • 4 Eier (eggs)
  • 300 g Zucker (sugar)
  • 200 g Butter
  • 1 Prise Salz (pinch of salt)
  • 1 Päckchen Vanillinzucker (vanilla sugar)
  • 1 TL Zitronenschale, gerieben (grated lemon zest)
  • 0.5 TL Zimt (cinnamon) (for streusel)
  • 150 g Mehl (flour) (for streusel)
  • 50 g Zucker (sugar) (for streusel)
  • 100 g Butter, zerlassen (melted butter) (for streusel)

Instructions

  1. Preheat your oven to 180°C (356°F). Grease a large baking sheet or line it with parchment paper to prevent the cake from sticking.
  2. Prepare the base dough: In a large mixing bowl, beat the softened butter with the sugar and vanilla sugar until the mixture is creamy and pale. This should take several minutes with an electric mixer. Add the pinch of salt and grated lemon zest, then add the eggs one at a time, thoroughly beating after each addition until the mixture is light and fluffy.
  3. In a separate bowl, combine the flour with the baking powder and mix well. Gradually add the flour mixture to the butter-egg mixture, alternating with the lukewarm milk. Begin and end with the flour mixture. Mix until you have a smooth, lump-free batter.
  4. Spread the batter evenly onto the prepared baking sheet, using a spatula to ensure the surface is smooth and level.
  5. Wash the Zwetschken (plums), cut them in half, and remove the pits. Arrange the plum halves, cut side up, in overlapping rows over the entire surface of the batter so that they are densely and evenly distributed.
  6. Prepare the streusel topping: Sift the flour into a large bowl. Add sugar and cinnamon, mixing them together. Melt the butter gently, then pour it over the flour mixture. Using your hands or a fork, quickly rub and mix the ingredients together until coarse crumbs or streusel form.
  7. Evenly sprinkle the streusel mixture over the plums, ensuring all areas are covered for a crispy, crumbly topping.
  8. Place the baking sheet on the middle rack of the preheated oven. Bake the Zwetschken-Streuselkuchen at 180°C (356°F) for about 50 minutes, or until the streusel topping is golden brown and the plums are soft and juicy.
  9. Remove the cake from the oven and let it cool on the baking sheet for at least 15 minutes before slicing. Serve warm or at room temperature, optionally dusted with powdered sugar or accompanied by whipped cream.

Notes

For best results, use ripe but firm Zwetschken (plums) to ensure the cake does not become too watery. The cake can be enjoyed warm or cold and tastes delicious with a dollop of freshly whipped cream or a scoop of vanilla ice cream. You can prepare the streusel with a pinch of ground almonds for extra flavor. Store any leftovers in an airtight container to keep the cake moist.
