  • 2 Tüten Vanillinzucker
  • 2 Eier
  • 70 ml Öl
  • 140 g Mehl
  • 1/2 Tüte Backpulver, gesiebt
  • 80 ml Fanta

Instructions

  1. Preheat your oven to 180°C (356°F) so it is ready for baking once your batter is prepared. Prepare either a small baking tray (approximately 30 x 22 cm) or a 26 cm springform pan by greasing it thoroughly and lining the bottom with parchment paper. This will prevent the cake from sticking and make it easier to remove after baking.
  2. In a large mixing bowl, combine the sugar, vanillinzucker (vanilla sugar), and eggs. Using a hand mixer or stand mixer, beat the mixture on high speed until it becomes light, pale, and fluffy. This process incorporates air into the batter, resulting in a lighter cake.
  3. Add the oil to the egg mixture and continue mixing until it is fully incorporated. The oil will help keep your cake moist and tender.
  4. In a separate bowl, sift together the flour and the backpulver (baking powder). Gradually add the sifted dry ingredients to the wet mixture, mixing gently on low speed or by hand until just combined. Be careful not to overmix to ensure the cake remains light.
  5. Pour in the Fanta and gently fold it into the batter until it is evenly distributed. The Fanta will provide a subtle citrus flavor and help the cake rise.
  6. Pour the finished batter into the prepared baking tray or springform pan. Use a spatula to spread the batter evenly, ensuring the surface is level for even baking.
