  • 1 bunch spring onions (or 2 shallots or onions)
  • 1 package cream cheese or sour cream (Schmand)
  • 200 g ham, raw or cooked
  • black pepper
  • 1 roll refrigerated puff pastry
  • a pinch of salt

Instructions

  1. Preheat your oven to 170°C (fan/convection setting). Line a baking tray with parchment paper and set aside.
  2. Peel the onions, shallots, or spring onions. If using spring onions, wash and trim them. Finely dice the onions and set aside.
  3. Cut the ham, whether raw or cooked, into small cubes. Make sure the pieces are evenly sized for a consistent filling.
  4. In a mixing bowl, combine the diced onions (or spring onions or shallots) with the cubed ham. Add the cream cheese or sour cream (Schmand) to the bowl.
  5. Mix the ingredients together thoroughly until the ham and onions are evenly coated with the cream cheese or sour cream.
  6. Season the mixture generously with black pepper and a little salt to taste. If desired, add a pinch of dried herbs such as Herbes de Provence for extra flavor.
  7. Unroll the sheet of refrigerated puff pastry onto a clean work surface. Make sure it lies flat and smooth out any folds.
  8. Evenly spread the ham and cheese mixture over the surface of the puff pastry, leaving a small border (about 1 cm) around the edges to prevent the filling from spilling out when rolling.
  9. Starting from one long edge, carefully roll up the puff pastry with the filling inside, creating a tight, even log.
  10. Using a sharp knife, slice the rolled pastry into pieces about 3 cm thick. Aim for even slices so that they bake uniformly.
  11. Arrange the slices, cut side up, on the prepared baking tray. Leave some space between each roll to allow for expansion during baking.
  12. Place the tray in the preheated oven and bake the rolls for 10 to 15 minutes, or until the pastry is puffed and golden brown. If you prefer a deeper color and crispier texture, bake a few minutes longer, keeping a close eye to prevent over-browning.
  13. Once baked, remove the tray from the oven. Allow the flammkuchen rolls to cool slightly before serving. They can be enjoyed warm or at room temperature.
