- 2 handfuls of spinach
- 20 slices of bacon
- 2 teaspoons garlic powder
- 2 sprigs of thyme
- 4 slices of cooked ham
- 4 slices of cheese
- 1 kg ground meat (beef or mixed)
- 2 eggs
- 50 g breadcrumbs
- Salt
- Pepper
Instructions
- Preheat your oven to 181°C (357°F) with top and bottom heat. Prepare a large piece of aluminum foil on your work surface.
- In a large mixing bowl, combine the ground meat, breadcrumbs, garlic powder, leaves from the thyme sprigs, eggs, salt, and pepper. Knead the mixture thoroughly with clean hands until all ingredients are well incorporated and the mixture is smooth and cohesive.
- Transfer the meat mixture onto the prepared aluminum foil. Using your hands, press and shape the meat into a flat, even rectangle about 2 cm thick, making sure the surface is smooth and the edges are tidy.
- Evenly layer the slices of cheese over the meat rectangle, leaving a small border around the edges. Next, place the slices of cooked ham on top of the cheese. Finally, distribute the spinach leaves evenly over the ham.
- Using the aluminum foil to help you, carefully roll up the meat and filling tightly from one short end to the other, forming a compact roll. Make sure to roll it so that the filling stays inside and the seam is sealed. Tuck in the sides gently to prevent the filling from escaping.
- Once rolled, cover the entire meat roll with the bacon slices, overlapping them slightly so the bacon fully encases the roll. Gently wrap the bacon-covered roll in the aluminum foil, sealing the ends to hold everything in place.
- Place the wrapped meat roll on a baking tray and transfer it to the preheated oven. Bake for about 25 minutes at 181°C (357°F).
- After 25 minutes, carefully remove the baking tray from the oven. Unwrap and remove the aluminum foil from the roll, being cautious as it will be hot and release steam.
- Increase the oven temperature to 251°C (484°F). Return the uncovered meat roll to the oven and bake for an additional 25 to 30 minutes. This will allow the bacon to become crispy and golden brown. Check occasionally to ensure the bacon does not burn.
- Once the bacon is crispy and the meat is cooked through, remove the tray from the oven and allow the roll to rest for a few minutes. Then, using a sharp knife, cut the meat roll into thick slices and serve warm.
