  • 5 Eier
  • 1 Päckchen Vanillezucker
  • 200 g Margarine oder Butter
  • 300 g Quark
  • 550 g Mehl
  • 5 TL Backpulver
  • Etwas Puderzucker

Instructions

  1. Begin by preparing all your ingredients. Measure out the sugar, butter or margarine, quark, and flour. Allow the butter or margarine to come to room temperature for easier mixing.
  2. In a large mixing bowl, combine the sugar, vanilla sugar, eggs, and the softened margarine or butter. Using a hand mixer or stand mixer, beat these ingredients together on medium-high speed for several minutes until the mixture is pale and creamy. This aerates the batter and ensures a light cake.
  3. Add the quark to the bowl and mix it in thoroughly with the mixer on medium speed, ensuring it is fully incorporated and the batter is smooth.
  4. In a separate bowl, whisk together the flour and baking powder until well combined. This step helps to evenly distribute the baking powder throughout the flour, ensuring the cake rises uniformly.
  5. Gradually add the flour and baking powder mixture to the wet ingredients. Use a spatula or the mixer on low speed to gently fold or mix the dry ingredients in, being careful not to overmix. Mix just until all the flour is incorporated and the batter is smooth and thick.
  6. Preheat your oven to 180°C (356°F) with the rack in the middle position. While the oven is heating, choose a suitable cake pan (such as a bundt pan or loaf pan), and generously grease it with butter or non-stick spray to prevent sticking.
  7. Pour the cake batter evenly into the prepared pan, smoothing the top with a spatula. Tap the pan lightly on the counter to release any large air bubbles.
  8. Place the pan in the preheated oven and bake the cake at 180°C (356°F) for approximately 60 minutes. About 50 minutes into baking, begin checking for doneness by inserting a wooden skewer or toothpick into the center of the cake. If it comes out clean or with a few moist crumbs, the cake is done. If not, continue baking, checking every 5 minutes.
  9. Once baked, remove the cake from the oven and allow it to cool in the pan for 10–15 minutes. Then, carefully run a knife around the edge of the pan if necessary, and invert the cake onto a wire rack to cool completely.
  10. When the cake is completely cooled, transfer it to a serving platter. Sift a generous amount of powdered sugar over the top for a beautiful finish. Slice and serve your heavenly Quark-Rührkuchen. Enjoy!

For best results, ensure all ingredients are at room temperature before starting. You can use either butter or margarine as desired; butter will impart a richer flavor.
