  • 100 g Schlagobers (whipping cream)

  • 1 Bund Schnittlauch, in Röllchen geschnitten
  • 1 Prise gemahlene Muskatnuss

Instructions

  1. Begin by thoroughly washing the potatoes under cold running water to remove any dirt. Place the potatoes in a large pot and fill it with enough water to cover them. Bring the water to a boil over medium-high heat, then reduce the heat and let the potatoes simmer until they are just tender when pierced with a fork. This should take about 20-25 minutes, depending on the size of the potatoes.
  2. Once the potatoes are cooked, drain them and allow them to cool slightly so they are easier to handle. Carefully peel the potatoes while they are still warm, then immediately press them through a potato ricer or mash them very finely to achieve a smooth texture. Place the mashed potatoes in a large mixing bowl.
  3. Finely chop the onion and add it to the bowl with the warm mashed potatoes. Pour in the Schlagobers (whipping cream) and Sauerrahm (sour cream) as well.
  4. Using a large spoon or spatula, gently mix the potatoes, onions, Schlagobers, and Sauerrahm together until you have a creamy, well-combined mixture. Make sure the onion is evenly distributed throughout the mixture.
  5. Season the potato mixture with a generous pinch of salt, a pinch of freshly ground black pepper, and a pinch of freshly grated or ground nutmeg. Taste the mixture and adjust the seasoning to your liking, adding more salt, pepper, or nutmeg if desired.
  6. Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow the Kartoffelkäse to chill and rest in the fridge for at least 2-3 hours. This resting time allows the flavors to meld and the mixture to set, resulting in a creamy, spreadable consistency.
  7. Before serving, remove the Kartoffelkäse from the refrigerator and give it a gentle stir. Serve the Kartoffelkäse generously spread on slices of fresh, buttered bread. Garnish each serving with a generous sprinkle of freshly chopped chives (Schnittlauchröllchen) for added color and flavor.
