  1. Begin by separating the egg whites from the yolks, ensuring that no yolk is mixed in with the whites, as this will help the egg whites whip properly.
  2. Place the egg whites in a clean, dry bowl. Using an electric mixer or a whisk, beat the egg whites on high speed until stiff peaks form. This means the egg whites should hold their shape when you lift the whisk out of the bowl.
  3. In a separate bowl, add the low-fat quark and squeeze in the juice of one lemon. If you prefer a sweeter taste, add sweetener or stevia at this stage to your desired sweetness level.
  4. Mix the quark, lemon juice, and sweetener together until the mixture becomes smooth and creamy. Make sure all ingredients are well combined and the texture is uniform.
  5. Gently fold the stiffly beaten egg whites into the quark mixture. To do this, use a spatula and carefully lift and turn the mixture, working slowly to keep as much air in the egg whites as possible. This will make the final dish light and fluffy.
  6. Continue folding until the egg whites are fully incorporated and the entire mixture is airy and well-blended, but be careful not to overmix, as you want to maintain the fluffiness.
  7. Once the mixture is ready, transfer it to serving bowls or glasses. Serve immediately for the best texture and freshness.

Notes

For best results, use very fresh eggs and ensure that your mixing bowls and utensils are completely clean and dry when whipping the egg whites.
