Die Mascarpone-Stäbchen passen perfekt zu einer Tasse Kaffee. Dieses Rezept gelingt schnell und wird am besten bereits am Vortag zubereitet.


Ingredients

  • 250 g Mascarpone
  • 4 Pk Vanillezucker
  • 2 EL Kristallzucker
  • 3 EL Zitronensaft
  • 30 Stk Biskotten (ladyfingers)
  • 250 ml Schlagobers (whipping cream)
  • 125 g Kokosraspeln (desiccated coconut)
  • 1 Stk Spritzbeutel (piping bag)

Instructions

  1. In a medium mixing bowl, combine the mascarpone, vanilla sugar, granulated sugar, and freshly squeezed lemon juice. Using a whisk, mix thoroughly until the mixture is smooth, creamy, and all ingredients are well incorporated. Ensure there are no lumps left in the mascarpone mixture.
  2. Once the mascarpone cream is smooth, transfer the mixture into a piping bag. This will help you pipe the cream evenly onto the ladyfingers.
  3. Arrange 15 of the ladyfingers (Biskotten) on a clean work surface. Pipe a generous, even layer of the mascarpone cream along the length of each ladyfinger, ensuring the cream is spread from end to end.
  4. Take the remaining 15 ladyfingers and gently place them on top of the cream-covered ladyfingers to create sandwich-like sticks. Press lightly so the sticks hold together but the cream does not ooze out.
  5. Pour the whipping cream (Schlagobers) into a long, narrow dish or container that is deep enough to dip the assembled sticks. On a separate small plate, spread out the desiccated coconut in an even layer.
  6. One by one, carefully dip each mascarpone-filled stick briefly into the whipping cream, ensuring it is lightly coated but not soaked. Immediately roll or press each stick in the desiccated coconut until it is thoroughly covered on all sides.
  7. Place the finished mascarpone sticks on a tray or plate. Once all sticks are coated, cover them loosely with plastic wrap or place them in an airtight container.
  8. Let the mascarpone sticks rest in the refrigerator overnight. This chilling time allows the flavors to meld and gives the dessert a soft, tender texture.
  9. Before serving, optionally dust with additional coconut or decorate as desired. Serve chilled with a cup of coffee or tea.

For best results, allow the Mascarpone-Stäbchen to rest in the refrigerator overnight, as this helps the flavors develop and the texture become soft and creamy. Use high-quality mascarpone and fresh lemon juice for optimal taste. If you do not have a piping bag, you can also use a plastic bag with the corner cut off to pipe the cream. Handle the dipped sticks gently as they may become delicate once assembled.
