- 150 g Mohn (poppy seeds)
- 180 g Staubzucker (powdered sugar)
- 0.125 ml Milch (milk)
- 1 Pk Vanillezucker (1 packet vanilla sugar)
- 100 g Butter (room temperature)
- 80 g Mehl (flour)
- 3 Eier (eggs)
- 1 Prise Salz (pinch of salt)
- 0.5 Pk Backpulver (half a packet baking powder)
- 1 Pk QimiQ
- 1 Pk Brunch, natur (plain cream cheese spread)
- 120 g Zucker (sugar)
- 0.5 Becher Sauerrahm (half a tub sour cream)
- 1 Dose Pfirsich (1 can peaches)
Instructions
- Preheat your oven to 180°C (356°F) with top and bottom heat. Grease a baking tray (approximately 42 x 29 x 2 cm) with butter and set aside.
- Separate the eggs, placing the egg whites into a clean, grease-free mixing bowl. Add a pinch of salt to the egg whites and beat them with an electric mixer until stiff peaks form. Set aside.
- In a separate large bowl, cream the room temperature butter with the egg yolks, powdered sugar, vanilla sugar, and milk. Beat until the mixture is smooth and creamy.
- In another bowl, mix together the flour, baking powder, and poppy seeds. Gradually add this dry mixture to the butter mixture, stirring well until fully combined.
- Gently fold the stiffly beaten egg whites into the batter using a spatula. Be careful not to deflate the mixture, folding until no streaks remain and the batter is light and airy.
- Pour the batter onto the prepared baking tray and spread it evenly with a spatula. Smooth the top for even baking.
- Place the tray in the preheated oven and bake for about 45 minutes, or until the cake is golden on top and a toothpick inserted in the center comes out clean. Remove from the oven and allow to cool completely in the tray.
- While the base is cooling, prepare the cream. In a bowl, whip the QimiQ until stiff. Add the plain Brunch (cream cheese spread), sugar, and sour cream. Mix thoroughly with a hand mixer until the cream is smooth and homogeneous.
- Open the can of peaches, drain them well, and cut the peaches into small, bite-sized pieces.
- Once the poppy seed cake base is completely cooled, carefully remove it from the tray and place it on a flat surface or serving platter.
- Spread a thin layer of the prepared cream evenly over the cake base.
- Distribute the chopped peach pieces evenly over the layer of cream, ensuring every piece has some fruit.
- Spread the remaining cream over the fruit layer, smoothing it out with a spatula to cover the entire surface of the cake.
- Optional: Sprinkle the finished cake with chocolate shavings or coconut flakes for extra flavor and decoration.
