- 6 eggs
- 100 g flour
- 250 g margarine
- 250 g sugar
- 1/2 packet baking powder
- 2 packets vanilla sugar
- a little lemon juice
- 2 cans mandarin oranges
Instructions
- Preheat your oven to 170°C (340°F) using top and bottom heat. Prepare a springform pan by greasing it lightly with margarine or lining it with baking paper to prevent sticking.
- Drain the mandarin oranges thoroughly using a sieve to remove excess juice, which will help prevent the cake from becoming soggy. Set aside a few mandarin segments for decoration if desired.
- In a large mixing bowl, add the quark, eggs, flour, margarine, sugar, baking powder, vanilla sugar, and a splash of lemon juice. Using a hand mixer or stand mixer, beat the mixture until all ingredients are fully combined and the batter is smooth and creamy.
- Gently fold in the drained mandarin orange segments (except for the reserved ones, if any) into the batter. Take care not to break up the fruit too much, so the pieces remain whole in the finished cake.
- Pour the entire batter into the prepared springform pan and spread it evenly with a spatula. If you reserved any mandarin segments, arrange them decoratively on top of the batter.
- Place the pan on the middle rack of the preheated oven. Bake for approximately 1 hour at 170°C (340°F), or until the top is lightly golden and the cake is set. You can test doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
- Once the baking time is complete, turn off the oven and leave the cake inside with the door slightly ajar. Allow the cake to cool gradually in the oven for at least 30 minutes. This helps prevent the cake from collapsing.
- After cooling in the oven, remove the cake from the oven and allow it to reach room temperature. Once completely cooled, carefully release the springform pan. Slice and serve the cake as desired. Optionally, dust with powdered sugar or garnish with additional fruit.
Notes
This cake is very versatile and can be prepared with other fruits such as cherries if you prefer. For best results, always let the cake cool gradually in the oven after baking to prevent it from collapsing. The cake is quick to prepare, making it perfect for last-minute guests or busy days. If you like a sweeter cake, you can add extra sugar to taste.
