- 150 ml gherkin brine (from the pickled gherkin jar)

Instructions
- Begin by preparing all of your ingredients. Cut the Gouda cheese into thin, uniform strips. Similarly, slice the Schinkenwurst (cooked ham sausage) into thin strips. This ensures that all the ingredients are roughly the same size and will blend well together in the salad.
- Clean the radishes thoroughly and trim off the ends. Using a sharp knife or a mandoline, cut the radishes into thin strips. This will provide a crisp texture and a mildly spicy flavor to the salad.
- Take the pickled gherkins and slice them lengthwise into thin, even strips. Set them aside with the other prepared ingredients.
- Clean the spring onions by removing any wilted outer layers and trimming the roots and the dark green tops. Slice the spring onions into thin rings. The delicate onion flavor will enhance the salad’s freshness.
- In a large mixing bowl, combine the Gouda cheese strips, Schinkenwurst strips, sliced radishes, pickled gherkin strips, and spring onion rings. Gently toss them together to ensure even distribution.
- Prepare the marinade by whisking together the neutral-flavored oil, white vinegar, and the gherkin brine in a separate bowl. Add a pinch of sugar, and season generously with salt and freshly ground black pepper. Taste the marinade and adjust the seasoning as needed, ensuring a balance of tangy, sweet, and savory flavors.
- Pour the prepared marinade evenly over the salad ingredients in the mixing bowl.
- Using salad tongs or clean hands, mix all the ingredients thoroughly so that the marinade coats every piece evenly. Make sure all the flavors are well combined.
- Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow the salad to marinate for at least 2 hours. This resting period helps the flavors meld together and enhances the overall taste of the salad.
- After marinating, give the salad a final stir before serving. Transfer to a serving dish and garnish with additional sliced spring onions or fresh herbs if desired. Serve chilled, ideally with fresh Ciabatta bread on the side for a complete meal.
