Instructions
- Begin by unwrapping all of the Raffaello chocolates and placing them in a medium mixing bowl. Using a potato masher or the back of a fork, crush the Raffaello chocolates thoroughly until they are finely crumbled and there are no large pieces remaining. The mixture should resemble coarse crumbs.
- In a large mixing bowl, combine the quark (Topfen), sugar, and vanillinzucker with the crushed Raffaello chocolates. Use a hand mixer or a whisk to blend the ingredients thoroughly until the mixture is creamy and smooth, ensuring that the sugar and vanillinzucker are fully dissolved.
- Pour the cold cream (Sahne) into a separate clean bowl. Using an electric mixer or hand whisk, beat the cream on high speed until stiff peaks form. The cream should hold its shape when the whisk is lifted, indicating that it is properly whipped.
- Gently fold the whipped cream into the quark and Raffaello mixture. Use a spatula to incorporate the cream by lifting and folding it through the mixture. Take care not to deflate the cream, as this will help the dessert remain light and airy. Continue folding until the mixture is homogeneous and no streaks of cream remain.
- Place the frozen raspberries (Himbeeren) in an even layer at the bottom of a large serving dish or divide them equally among four individual dessert glasses or bowls. Do not thaw the raspberries beforehand, as they will gradually thaw during the resting period and release their juices.
- Spoon the prepared Raffaello cream mixture over the raspberries, spreading it gently to completely cover the fruit. Smooth the top with a spatula or the back of a spoon for an even finish.
- Cover the dessert with plastic wrap or a lid and refrigerate for at least 5 hours, or until ready to serve. During this time, the raspberries will thaw and infuse the cream with their flavor and juices, creating a delicious contrast between the creamy layer and the tart fruit.
