  • 65 g powdered sugar (Staubzucker)
  • 105 g unsalted butter, softened
  • 5 eggs
  • 105 g bittersweet chocolate
  • 110 g granulated sugar
  • 1 pinch salt
  • 105 g all-purpose flour
  • 0.5 jar apricot jam (Marillenmarmelade)
  • 2 tubs chocolate glaze (Schokoladeglasur)

Instructions

  1. Preheat your oven to 170°C (340°F). Line a baking tray with parchment paper and set aside. Ensure all your ingredients are at room temperature before starting.
  2. In a large mixing bowl, beat the softened butter together with the powdered sugar until the mixture is very light and creamy. This should take about 3-5 minutes using an electric mixer. Add the egg yolks one at a time, beating thoroughly after each addition. Add a pinch of salt and continue to mix until the mixture is smooth and well combined.
  3. Break the bittersweet chocolate into pieces and melt it in a heatproof bowl set over a pot of gently simmering water (double boiler). Stir occasionally until the chocolate is completely melted and glossy. Allow the chocolate to cool slightly, then gently fold it into the butter-egg yolk mixture until fully incorporated.
  4. In a separate clean mixing bowl, whip the egg whites with an electric mixer until they start to become foamy. Gradually add the granulated sugar while beating, and continue to whip until stiff, glossy peaks form. This will help give the cake its signature airiness.
  5. Sift the flour to remove any lumps. Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then, alternately fold in the remaining egg whites and flour in batches, using a spatula and taking care not to deflate the mixture. Continue folding until everything is just combined and the batter is smooth and airy.
  6. Pour the batter evenly onto the prepared baking tray and use an offset spatula to spread it into a smooth, even layer. Bake in the preheated oven for about 40 minutes, or until a toothpick inserted into the center comes out clean and the cake springs back when touched lightly.
  7. Remove the cake from the oven and let it cool completely on the tray. Once cooled, carefully remove the cake from the tray and peel off the parchment paper.
  8. Trim the edges of the cake if necessary to make straight sides. Cut the cake into three equal rectangles. Warm the apricot jam slightly to make it more spreadable. Using a pastry brush or small spatula, spread a thin layer of apricot jam over two of the cake layers. Stack the three layers on top of each other, finishing with the un-jammed layer on top.
  9. Using a sharp knife, cut the layered cake into small, even cubes or squares (Würfel) of your desired size. Clean the knife between cuts for neat edges.
  10. Melt the chocolate glaze according to the package instructions, usually in a heatproof bowl over simmering water. Place a wire rack over a baking sheet to catch excess glaze. Using a fork or dipping tool, carefully dip each cube into the melted chocolate glaze, ensuring all sides are coated. Place each finished Sacherwürfel onto the wire rack and allow the glaze to set completely.
  11. Once the chocolate glaze has set, transfer the Sacherwürfel to a serving platter. Serve and enjoy your homemade Sacherwürfel as a delightful, bite-sized version of the classic Sachertorte.

Notes

For best results, use high-quality bittersweet chocolate and real apricot jam for traditional Sacher flavor. The cake can be made a day ahead and stored in an airtight container to allow the flavors to develop. If you prefer, you can decorate each Sacherwürfel with a small piece of chocolate or a piped swirl on top. Clean your knife between cuts for perfectly shaped cubes. Ensure the chocolate glaze is smooth and not too hot when dipping the cubes to achieve a glossy finish.
