Instructions
- Preheat your oven to 180°C (top and bottom heat) and line a baking tray with parchment paper to prevent sticking.
- Place the softened butter, powdered sugar, and a pinch of salt into a large mixing bowl. Using an electric mixer, beat the mixture on medium-high speed until it becomes light, creamy, and fluffy. This should take about 3-5 minutes.
- Separate the eggs, placing the yolks and whites into two separate bowls. Set aside the egg whites for later use.
- Add the egg yolks one at a time to the butter-sugar mixture, beating well after each addition. Ensure each yolk is fully incorporated before adding the next.
- In a clean, grease-free bowl, beat the egg whites with an electric mixer until stiff peaks form. The meringue should hold its shape and not slide if the bowl is tilted.
- Stir the grated chocolate into the butter-sugar-egg mixture until fully combined and the mixture is evenly chocolatey.
- Gradually fold the breadcrumbs, ground almonds, and flour into the batter, alternating with portions of the beaten egg whites. Use a spatula and gently fold after each addition to keep the mixture light and airy. Continue until all the dry ingredients and egg whites are incorporated and the batter is smooth.
- Spread the finished batter evenly onto the prepared baking tray, smoothing the surface with a spatula so it is level.
- Place the tray in the preheated oven and bake for about 25 minutes. The Schokoschnitte is ready when the top is firm and a toothpick inserted into the center comes out clean or with only a few moist crumbs attached.
- Remove the tray from the oven and allow the Schokoschnitte to cool completely on the tray. Once cooled, cut into slices or bars and serve. For an extra touch, dust with powdered sugar or drizzle with melted chocolate before serving if desired.
Notes
For an even richer flavor, you can add a teaspoon of vanilla extract to the batter. Be sure not to overmix when folding in the egg whites to maintain a light and airy texture. The Schokoschnitte keeps well for a few days stored in an airtight container and can be enjoyed as a quick snack or dessert.
