- 250 g Zucker
- 1 packet Vanillezucker (vanilla sugar)
- 1 egg
- 1 pinch salt
- 1 packet baking powder
- 500 g flour
- 1 kg quark (curd cheese)
- 1 packet vanilla pudding powder
- 200 g sugar
- 1 egg
- Juice of 1/2 lemon
- 1 jar cherries, drained (or any other prepared fruit of choice)
Instructions
- Preheat your oven to 175°C (347°F) with both top and bottom heat. Line a baking sheet (approx. 30×40 cm) with parchment paper to prevent sticking.
- Melt the butter in a small saucepan over low heat, then set it aside to cool until it is just warm, not hot.
- In a large mixing bowl, combine the cooled melted butter, 250 g sugar, 1 packet of vanilla sugar, 1 egg, a pinch of salt, 1 packet of baking powder, and 500 g flour.
- Using the dough hook attachment of your hand mixer or stand mixer, mix all the dough ingredients together until the mixture is crumbly and resembles coarse sand or streusel. Do not overmix; the dough should not form a cohesive ball.
- Reserve about one quarter of the crumbly dough mixture; place this portion in a separate bowl and set aside for the streusel topping later.
- Take the remaining three quarters of the dough and spread it evenly onto the prepared baking sheet. Press the dough down firmly with your hands or the back of a spoon to form an even base layer across the entire sheet.
- In a clean mixing bowl, add 1 kg quark, 1 packet vanilla pudding powder, 200 g sugar, 1 egg, and the juice of half a lemon.
- Mix all the topping ingredients together using a whisk or electric mixer until the mixture is smooth, creamy, and fully combined. Make sure there are no lumps.
- Spread the quark mixture evenly over the dough base using a spatula or the back of a spoon, making sure to cover the entire surface up to the edges.
- Drain the cherries (or prepare your chosen fruit) thoroughly to remove excess liquid. Evenly distribute the fruit over the quark layer, arranging it so that each slice will have some fruit.
- Take the reserved quarter of dough. Crumble it evenly over the fruit and quark layer to create a streusel topping. Try to distribute the streusel so all areas are covered with some crumbs.
- Place the baking sheet on the middle rack of the preheated oven. Bake the cake at 175°C (347°F) for 30-35 minutes, or until the streusel is golden brown and the filling is set.
- Remove the cake from the oven and allow it to cool on the baking sheet. Once cooled, cut into squares or rectangles and serve. Enjoy your quick quark streusel cake with fruit!
Notes
This versatile cake can be made with any fruit you have on hand, such as cherries, apricots, peaches, plums, or berries. Be sure to drain canned or jarred fruit well to prevent the cake from getting soggy. The cake can be stored in an airtight container in the refrigerator for up to three days. It also tastes delicious when served slightly chilled or at room temperature.
