  • 2 ¾ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup sparkling mineral water
  • ½ cup vegetable oil
  • 4 eggs
  • 1 packet vanilla sugar
  • 1 packet baking powder
  • 12 jars sour cherries, drained

Instructions

  1. Preheat your oven to 180°C (356°F) and line a rectangular baking sheet (approximately 30×40 cm) with parchment paper or lightly grease it to prevent sticking.
  2. In a large mixing bowl, combine the flour, cocoa powder, granulated sugar, vanilla sugar, and baking powder. Stir the dry ingredients together until they are well blended and no lumps remain.
  3. Add the eggs, vegetable oil, and sparkling mineral water to the bowl with the dry ingredients. Using an electric mixer or a sturdy whisk, mix everything together on medium speed until you have a smooth, lump-free batter. Be sure to scrape down the sides and bottom of the bowl to incorporate all the ingredients evenly.
  4. Pour the chocolate batter onto the prepared baking sheet and spread it evenly using a spatula or the back of a spoon, making sure the batter reaches into all corners and has an even thickness throughout.
  5. Drain the sour cherries thoroughly to remove excess liquid. Evenly distribute the cherries across the surface of the batter, pressing them in lightly so they are slightly embedded in the batter.
  6. Place the baking sheet in the preheated oven and bake for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean and the cake springs back lightly when touched.
  7. Once baked, remove the baking sheet from the oven and allow the cake to cool on the tray. Once cooled, cut the cake into squares or rectangles and serve. Optionally, you can dust the cooled cake with powdered sugar or drizzle with melted chocolate for extra flavor.

Notes

The amount of batter may vary depending on the size of your cups. Make sure to use standard measuring cups if possible for best results. You can adjust the number of cherries according to your preference. This cake can be enjoyed plain or topped with a dusting of powdered sugar or a chocolate glaze.
