- 2 Stk Bananen
- 3 Stk Eier
- 50 g klein gehackte Schokolade
- 150 g Mehl
- 2 EL Rum
- 1 Pk Vanillezucker
- 100 g weiche Butter oder Margarine
- 100 g Zucker
- 2 EL Nüsse (Walnüsse)
Instructions
- Begin by preparing your muffin tin: Line a standard muffin tray with paper muffin liners, making sure each cup is fully covered. Preheat your oven to 180°C (356°F) using the top and bottom heat setting (Ober-/Unterhitze), so it’s ready for baking once the batter is mixed.
- Separate the eggs carefully, placing the egg whites in a clean mixing bowl and the yolks in another. Using a hand mixer or stand mixer with a whisk attachment, beat the egg whites on high speed until stiff peaks form. Set aside.
- In a large mixing bowl, combine the softened butter or margarine with the sugar and vanilla sugar. Beat the mixture on medium-high speed until it is light, creamy, and pale in color. Add the egg yolks one at a time, mixing well after each addition. Pour in the rum and continue to beat until the mixture is smooth and fully incorporated.
- Sift the flour and baking powder together to remove any lumps and ensure even distribution of the leavening agent. Gradually fold the sifted flour and baking powder into the butter mixture using a spatula or mixer on low speed, mixing just until combined. Do not overmix, to keep the batter light.
- Finely grate or chop the walnuts (or leave them in slightly larger pieces for more texture, if desired). Add the walnuts to the batter and stir gently to distribute them evenly throughout.
- Peel the bananas and cut them into small cubes. Add the diced bananas and the finely chopped chocolate to the batter. Finally, gently fold in the beaten egg whites with a spatula, being careful not to deflate the mixture. Mix just until all ingredients are evenly combined and the batter is smooth.
- Spoon the batter into the prepared muffin liners, filling each cup about two-thirds full to allow room for the muffins to rise while baking.
- Place the muffin tray in the preheated oven and bake for approximately 20 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Once baked, remove the muffins from the oven and allow them to cool in the tray for about 5 minutes. Then, transfer the muffins to a wire rack to cool completely before serving.
Notes
For extra flavor, you can add a handful of chocolate chips on top of each muffin before baking. If you prefer, substitute other nuts such as hazelnuts or almonds. Ensure the bananas are ripe for maximum sweetness and flavor. These muffins can be stored in an airtight container for up to 3 days or frozen for longer storage.
