- 0.5 l Schlagobers (whipping cream)
- 200 g Schokolade (chocolate)
- 100 g Zucker (sugar)
- 2 Stück Eier (whole eggs)
- 2 Stück Dotter (egg yolks)
Instructions
- Prepare a heatproof bowl and a pot of simmering water to create a double boiler. In the bowl, combine the 2 whole eggs, 2 egg yolks, and the sugar.
- Place the bowl over the simmering water, ensuring the bottom does not touch the water. Using a hand mixer or whisk, beat the egg and sugar mixture continuously over the steam until the mixture becomes thick, pale, and warm to the touch. This process should take about 5-7 minutes. The mixture should at least double in volume.
- Remove the bowl from the heat. Continue beating the egg mixture with the mixer until it cools down completely. This may take an additional 10-15 minutes. The mixture should be light and airy.
- Meanwhile, break the chocolate into small pieces and melt it gently, either over a water bath or in short bursts in the microwave. Stir until smooth. Allow the melted chocolate to cool slightly so it is still liquid but not hot.
- Gradually add the melted chocolate to the cooled egg mixture, folding gently with a spatula or whisk until fully incorporated and smooth. Take care not to deflate the mixture.
- In a separate bowl, whip the Schlagobers (whipping cream) until it forms soft peaks. Do not overwhip.
- Carefully fold the whipped cream into the chocolate-egg mixture in several additions. Use gentle folding motions to maintain the airy texture. Mix until no streaks remain and the mousse is homogenous.
- Transfer the finished chocolate mousse into serving glasses or a large bowl. Cover and refrigerate for at least 2-3 hours, or until the mousse is well chilled and set.
- Before serving, optionally decorate the Schokomousse with additional whipped cream and, if desired, sprinkle with coconut flakes or chocolate shavings. Serve chilled.
