- 1 Bund Petersilie, feingehackt
- Salz und weißer Pfeffer
- Thymian
- 1 Zehe Knoblauch
- Butter
- Käse, in Scheiben
Instructions
- Begin by preparing the ingredients: peel and finely chop the onions, finely chop the parsley, and slice the cheese into strips. Peel the garlic and crush it with a garlic press or the flat side of a knife.
- In a large frying pan, melt a generous knob of butter over medium heat. Add the chopped onions and sauté them gently, stirring occasionally, until they become soft and translucent but not browned, about 5 minutes.
- Add the mixed ground meat to the pan. Incorporate the crushed garlic into the meat by kneading it together. Add the meat-garlic mixture to the onions in the pan and cook, stirring frequently and breaking up any lumps, until the meat is browned and cooked through, about 6-8 minutes.
- Deglaze the pan with the red wine by pouring it over the meat mixture and scraping up any caramelized bits from the bottom of the pan. Add the tomato paste and stir well to combine. Season the mixture generously with salt, white pepper, and a pinch of thyme to taste.
- Bring the mixture to a gentle simmer and let it cook for several minutes, allowing the flavors to meld and the liquid to reduce slightly, about 5 minutes. Stir in the finely chopped parsley and remove the pan from the heat.
- Preheat your oven to 180°C (fan/convection heat). Butter a large ovenproof baking dish generously to prevent sticking.
- In a large bowl, mix the prepared meat sauce with the Spätzle noodles until everything is evenly combined. Transfer this mixture into the prepared baking dish, spreading it out evenly.
- Pour the cream evenly over the Spätzle and meat mixture in the baking dish, ensuring it is distributed throughout.
- Arrange the sliced cheese strips in a lattice or crisscross pattern over the top of the casserole, covering the surface.
- Dot the top of the casserole with small pieces of butter for added flavor and a golden finish.
- Place the baking dish in the preheated oven and bake for about 15 minutes, or until the cheese is melted, golden, and bubbly, and the casserole is heated through.
- Remove the casserole from the oven and let it rest for a few minutes before serving. Garnish with additional fresh parsley if desired. Serve hot and enjoy your Schwäbischer Auflauf!
Notes
For an extra crispy top, you can place the casserole under the broiler for the last 2-3 minutes of baking. You can also substitute homemade Spätzle for an even more authentic taste. Adjust the seasoning to your preference, and feel free to use your favorite cheese variety for the topping.
