  • 1 Becher Schlagobers (whipping cream, approximately 200250 ml)
  • 350 g Schokolade (dark chocolate preferred)
  • 2 EL Cognac (2 tablespoons cognac)
  • 1 Pk Butterkekse (1 package butter biscuits)

Instructions

  1. Begin by preparing your equipment: line a Rehrückenform (a loaf pan or a special ‚Rehrücken‘ pan) with parchment paper, ensuring the paper covers the bottom and sides for easy removal later.
  2. Pour the Schlagobers (whipping cream) into a medium saucepan and gently heat it over medium-low heat. Stir occasionally and heat the cream until it is hot and steaming, but do not let it boil.
  3. Once the cream is hot, remove the saucepan from the heat. Immediately add the chopped or broken chocolate to the hot cream. Let it sit for 1-2 minutes to allow the chocolate to soften.
  4. Using a whisk or spatula, slowly stir the cream and chocolate together until the chocolate is completely melted and the mixture is smooth and glossy.
  5. Add the Cognac to the chocolate-cream mixture and stir well to combine, ensuring the flavor is evenly distributed.
  6. Begin assembling the dessert by spreading a thin layer of the chocolate mixture on the bottom of the lined Rehrückenform.
  7. Place a single layer of Butterkekse (butter biscuits) over the chocolate mixture, trimming the biscuits if necessary to fit tightly and cover the entire surface.
  8. Spread another layer of the chocolate mixture over the biscuits, smoothing it out with a spatula. Alternate layers of biscuits and chocolate mixture, pressing each biscuit layer gently into the chocolate to ensure even layers and good adhesion.
  9. Continue layering until all ingredients are used, finishing with a final layer of the chocolate mixture on top. Smooth the surface with a spatula for a neat finish.
  10. Cover the form tightly with plastic wrap or aluminum foil to protect it from absorbing fridge odors. Place the dessert in the refrigerator and let it chill for at least 6 hours, or overnight, to allow the chocolate to set and the flavors to meld.
  11. Once fully chilled and set, carefully invert the form onto a cutting board. Gently remove the form and peel away the parchment paper.
  12. Using a sharp knife, slice the Schwarzer Mann into 1-2 cm thick slices. Clean the knife between slices for clean edges. Serve chilled and enjoy.

Notes

For best results, use high-quality dark chocolate and real butter biscuits for authentic flavor and texture. You can substitute the Cognac with another liqueur or omit it for a non-alcoholic version.
