  • 1 EL Öl (1 tablespoon oil)
  • 1 TL Kümmel (1 teaspoon caraway seeds)
  • 0.5 TL Salz und Pfeffer (0.5 teaspoon salt and pepper)
  • 1 EL Senf (1 tablespoon mustard)
  • 1 Dose Bier (beliebig) (1 can of beer, any kind)

Instructions

  1. Preheat your oven to 200 degrees Celsius (about 390 degrees Fahrenheit) to ensure it is hot and ready for roasting the pork.
  2. If your pork roast has a layer of skin (Schwarte), use a sharp knife to score the skin in a diamond pattern. This helps the fat render and creates a crispy crust. Be careful not to cut too deeply into the meat.
  3. Rub the pork roast thoroughly on all sides with the oil, caraway seeds, and mustard. Season the meat generously and evenly with salt and pepper to enhance its flavor.
  4. Heat a large pan or skillet over medium-high heat and add a little clarified butter or oil. Once hot, place the pork roast in the pan and sear it on all sides until it develops a golden-brown crust. This step locks in the juices and adds flavor.
  5. Transfer the seared pork roast to a roasting dish or oven-safe casserole dish. Pour the can of beer evenly over the pork, ensuring some liquid surrounds the meat to keep it moist during roasting.
  6. Place the dish in the preheated oven. Roast the pork for approximately 2 to 2.5 hours, basting it every 20–30 minutes with the beer juices from the bottom of the dish. This regular basting helps to keep the meat moist and infuse it with the rich beer flavor.
  7. After the roasting time, check that the pork is cooked through and the skin is crispy. Remove the roast from the oven and let it rest for 10–15 minutes before slicing. Serve the Schweinebraten with your favorite sides and spoon some of the beer sauce over the meat.

Notes

For a traditional Bavarian meal, serve this Schweinebraten with potato dumplings, sauerkraut, or warm cabbage salad and bread dumplings (Semmelknödel). You can use any kind of beer you prefer; a dark beer will give a richer flavor, while a lighter lager will make the sauce more delicate. Letting the roast rest before slicing ensures juicy and tender meat.
