Instructions
- Preheat your oven to 200°C (392°F). Using a pastry brush or a piece of paper towel, generously grease a tart pan (about 28 cm diameter or similar) with softened butter to prevent sticking and to help the crust brown evenly.
- Rinse the green asparagus thoroughly under cold water to remove any dirt or sand. Trim off the tough, woody ends of the asparagus spears with a sharp knife. Bring a large pot of salted water to a boil. Add the asparagus and blanch for 2-3 minutes until they are just slightly tender but still bright green. Remove the asparagus and immediately plunge them into a bowl of ice water to stop the cooking process. Drain well and set aside.
- In a medium mixing bowl, combine the heavy cream, crème fraîche, and eggs. Whisk everything together until the mixture is smooth and homogeneous. Add in the frozen mixed herbs, ground nutmeg, salt, and freshly ground black pepper. Whisk again to evenly distribute the herbs and seasoning throughout the custard mixture.
- Unroll the sheet of puff pastry and carefully transfer it into the prepared tart pan. Gently press the dough into the base and up the sides of the pan, forming a rim about 4 cm high. Trim any excess pastry hanging over the edges. Arrange the blanched asparagus spears evenly over the pastry base, laying them side by side.
- Carefully pour the prepared egg and cream mixture over the asparagus, ensuring that it is evenly distributed and fills all the gaps between the asparagus spears. If needed, gently shake or tap the pan to help the custard settle.
- Place the tart pan on the center rack of your preheated oven. Bake for approximately 35 minutes, or until the filling is set, the top is lightly golden, and the pastry is crisp and cooked through. If the top starts to brown too quickly, you can loosely cover it with aluminum foil for the last 10 minutes of baking.
- Remove the tart from the oven and let it cool for 5-10 minutes in the pan. Carefully remove the tart from the pan, slice, and serve warm. For an especially delicious meal, serve the asparagus tart with a fresh, crisp green salad.
Notes
For extra flavor, you can sprinkle grated cheese such as Gruyère or Parmesan over the tart before baking. Make sure not to overcook the asparagus during blanching, as it will continue to cook in the oven. This tart is delicious both warm and at room temperature, making it ideal for picnics or lunchboxes. Serve with a crunchy green salad for a perfect spring meal.
