  • 60 g Butter (softened)
  • 2 eggs
  • 300 g flour
  • 2 tablespoons sour cream
  • 1 pinch salt
  • 50 g poppy seeds
  • 25 g butter (for the poppy seed mixture)
  • 25 g powdered sugar

Instructions

  1. Prepare a large mixing bowl and add the Magertopfen (quark or low-fat curd cheese), softened butter, eggs, flour, sour cream, and a pinch of salt. Using a wooden spoon or electric mixer, thoroughly mix all the ingredients together until a smooth, homogeneous dough forms. The dough should be soft but not sticky.
  2. With lightly floured hands, take small portions of the dough and shape them into even, walnut-sized balls (knödel). Place the formed dumplings on a lightly floured surface or tray to prevent sticking.
  3. Bring a large pot of salted water to a gentle simmer. Carefully add the dumplings to the water, making sure not to overcrowd the pot. Let the dumplings cook gently (do not boil vigorously) for about 5 minutes, or until they float to the surface and are cooked through. Avoid stirring too much to prevent the dumplings from breaking apart.
  4. While the dumplings are cooking, prepare the poppy seed coating. Place 25 g of butter in a large skillet or frying pan and melt it over low heat. Add the poppy seeds and powdered sugar to the melted butter, stirring continuously until the mixture is well combined and fragrant. Keep the mixture warm over very low heat.
  5. Once the dumplings are cooked, use a slotted spoon to carefully remove them from the water, allowing excess water to drain off. Immediately place the hot dumplings into the skillet with the poppy seed mixture.
  6. Gently roll the dumplings in the poppy seed mixture, ensuring they are evenly coated on all sides. The butter and poppy seeds should cling to the surface of each dumpling, creating a flavorful and aromatic coating.
  7. Transfer the finished Topfenknödel mit Mohn to serving plates. Serve immediately while they are warm, optionally dusted with extra powdered sugar if desired. For an extra special touch, serve with a fruit sauce or fruit puree on the side.

Notes

If desired, you can serve the Topfenknödel with a fruit sauce (Fruchtspiegel) for added flavor and a beautiful presentation. Use fresh or frozen berries puréed with a little sugar and lemon juice for a simple fruit sauce. Make sure to use gentle heat when cooking the dumplings to prevent them from breaking apart.
