Description

Knusprige Walnüsse, glänzend umhüllt von karamellisiertem Ahornsirup, treffen auf würzige Sojasauce und feurigen Cayennepfeffer. Süß, salzig und scharf, mit goldener, knackiger Kruste – unwiderstehlich zum Snacken.


Ingredients

  • 100 g Zucker
  • 3 EL Sojasauce
  • 30 ml Olivenöl
  • 600 g Walnüsse, aus der Schale befreit
  • 1 ½ TL Cayennepfeffer oder Chilipulver
  • 150 ml Ahornsirup

Instructions

  1. Preheat your oven to 180°C (top and bottom heat). Line a large baking sheet with parchment paper to prevent the walnuts from sticking and to make cleanup easier.
  2. In a large mixing bowl, combine the sugar, soy sauce, olive oil, cayenne pepper or chili powder, and maple syrup. Stir the mixture thoroughly with a whisk or spoon until the sugar is mostly dissolved and all ingredients form a smooth sauce.
  3. Add the shelled walnuts to the bowl with the sauce. Using a spatula or your hands, mix everything very well so that all the walnuts are evenly coated with the sweet and spicy mixture. Take your time to ensure every walnut is covered.
  4. Spread the coated walnuts out in a single, even layer on the prepared baking sheet. Try to avoid overlapping the nuts, as this will help them roast evenly and become crisp.
  5. Place the baking sheet in the preheated oven and bake the walnuts for about 10 minutes. Halfway through the baking time (after about 5 minutes), use a spatula to carefully turn and stir the walnuts so they roast evenly and the coating caramelizes on all sides.
  6. After 10 minutes, remove the baking sheet from the oven. Allow the walnuts to cool completely on the tray. As they cool, the coating will harden and become crunchy.
  7. Once completely cooled, transfer the walnuts to an airtight container for storage. Enjoy them as a snack, or serve them alongside beer or red wine for a delicious treat.

Notes

These spiced caramelized walnuts are a perfect snack for parties or gatherings, and pair especially well with beer or red wine. Keep the walnuts in an airtight container to maintain their crunch—they will stay fresh for up to 3 months, but they’re so tasty they’ll likely disappear much sooner. Feel free to adjust the amount of cayenne or chili powder to suit your desired level of heat.
