  • 150 ml milk
  • 1 packet vanilla sugar
  • 3 tablespoons clarified butter (Butterschmalz)
  • 8 slices white bread
  • 100 g plum jam (Zwetschkenmarmelade or Powidl)
  • 4 tablespoons powdered sugar

Instructions

  1. Crack the eggs into a large mixing bowl and beat them until they are foamy and well combined. This will help create a fluffy and cohesive egg mixture for soaking the bread.
  2. Add the milk and the packet of vanilla sugar to the beaten eggs. Whisk everything together thoroughly until the sugar has dissolved and the mixture is uniform. Set this aside.
  3. Lay out the slices of white bread on a clean surface. Working one at a time, dip each slice of bread into the egg-milk mixture, ensuring both sides are well coated but not overly soggy. Be gentle to avoid breaking the bread.
  4. Once all the bread slices are dipped, spread a generous layer of plum jam (Zwetschkenmarmelade or Powidl) on half of the slices. Use the remaining slices to cover the jammed pieces, pressing gently to form a sandwich. You should end up with four filled sandwiches.
  5. Heat the clarified butter (Butterschmalz) in a large frying pan over medium heat. Once the butter is hot and shimmering, carefully place the filled bread sandwiches into the pan. Do not overcrowd; cook in batches if necessary.
  6. Fry each sandwich for about 3 minutes on the first side until it turns golden brown. Carefully flip each sandwich and fry the other side for another 3 minutes, or until both sides are evenly golden and the filling is heated through.
  7. Once the sandwiches are cooked, remove them from the pan and place them on a plate lined with kitchen paper towels. This will help absorb any excess fat.
  8. Transfer the Zwetschkenpofesen to a serving plate. Generously dust them with powdered sugar before serving. Serve warm and enjoy this delightful treat.

Notes

This recipe is perfect for using up stale or day-old white bread, making it a great way to avoid food waste. For extra flavor, you can add a pinch of cinnamon to the egg-milk mixture. If plum jam is not available, any thick fruit jam can be used as a substitute.
