- 1 kg Zwetschken (plums)
- 160 g Zucker (sugar)
- 150 ml Wasser (water)
- 1 Stange Zimt (cinnamon stick)
- 4 Stück Gewürznelken (cloves)
- 1 Stück Zitrone (lemon)
Instructions
- Begin by preparing your ingredients. Wash the Zwetschken (plums) thoroughly under running water. Cut each plum in half and remove the pit. Set the prepared plum halves aside.
- Take the lemon and squeeze it to extract the juice. Set the juice aside for use in the syrup.
- In a large saucepan, combine the water and sugar. Add the freshly squeezed lemon juice, the cinnamon stick, and the cloves to the saucepan as well.
- Place the saucepan over medium-high heat and bring the mixture to a boil, stirring occasionally to dissolve the sugar completely. Allow the mixture to boil for about 2-3 minutes so the flavors from the spices can infuse into the syrup.
- Add the prepared plum halves to the boiling syrup. Gently stir to combine, ensuring all the fruit is coated and submerged in the liquid.
- Reduce the heat to medium-low and let the mixture simmer uncovered. Cook the plums for about 20-30 minutes, stirring occasionally, until the fruit softens and just begins to break down, but still retains some shape. The syrup should become slightly thicker, and the plums should release their juices, resulting in a rich, flavorful compote.
- Once the Zwetschken are soft and the syrup has thickened, remove the saucepan from the heat. Using a slotted spoon or tongs, carefully remove the cinnamon stick and the cloves from the compote and discard them.
- Allow the Zwetschkenröster to cool to room temperature. Once cooled, transfer the compote into sterilized glass jars for storage, or spoon it directly onto plates for immediate serving.
- Serve the Zwetschkenröster warm or cold. It pairs beautifully with desserts like Kaiserschmarrn, Topfenauflauf, pancakes, ice cream, or can be enjoyed simply on its own.
Notes
For the best flavor, use ripe, aromatic plums. You can adjust the amount of sugar depending on the sweetness of your fruit and personal taste. Zwetschkenröster keeps well in the refrigerator for several days in a sealed jar. For longer storage, you can preserve it in sterilized jars using standard canning techniques. If you prefer a more intense flavor, you can add a splash of rum or a bit of vanilla to the compote. Serve warm for a comforting dessert, or chilled for a refreshing treat.
